Hot Feta Artichoke Dip

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 (14 ounce) can artichokes, quarters drained
  • 4 ounces feta cheese, crumbled
  • 1 cup mayonnaise
  • 1/2 cup parmesan cheese, shredded
  • 1 (2 ounce) jar pimientos, diced
  • 1 garlic clove, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon pepper
  • 1/4 cup green onion, sliced
  • 1/2 cup tomato, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cut artichoke quarters in half.
  • 3 mix all ingredients together except the green onions and tomatoes.
  • 4 bake in an au gratin dish or shallow 3 cup oven safe dish for 20 to 25 minutes, or until golden brown.
  • 5 remove from oven and let stand 5 minutes.
  • 6 garnish with sliced onions and tomatoes.
  • 7 serve with toasted pita triangles or baguette slices.
