Hot Feta Artichoke Dip

Ingredients
- 1 (14 ounce) can artichokes, quarters drained
- 4 ounces feta cheese, crumbled
- 1 cup mayonnaise
- 1/2 cup parmesan cheese, shredded
- 1 (2 ounce) jar pimientos, diced
- 1 garlic clove, minced
- 2 tablespoons lemon juice
- 1 teaspoon pepper
- 1/4 cup green onion, sliced
- 1/2 cup tomato, chopped
Recipe
- 1 preheat oven to 350 degrees.
- 2 cut artichoke quarters in half.
- 3 mix all ingredients together except the green onions and tomatoes.
- 4 bake in an au gratin dish or shallow 3 cup oven safe dish for 20 to 25 minutes, or until golden brown.
- 5 remove from oven and let stand 5 minutes.
- 6 garnish with sliced onions and tomatoes.
- 7 serve with toasted pita triangles or baguette slices.
