  • 1 heat oven to 350’. spray pam in 9â€? pie pan. (ok to use 9-inch square pan then cut into squares for appetizers.).

Honey Baked Chicken Wings

  • 1 throw some salt and sugar on the chicken wings.

  • 1 1/2 gallons whole milk
  • 1 quart buttermilk
  • 2 tablespoons salt

  • 1 in a large sauce pot with a heavy bottom heat over medium high until it starts to boil, stirring consistently so as not to burn the bottom of the pot, about 10 minutes.
  • 2 line a strainer with three layers of cheesecloth; get string or rubber band ready.
  • 3 add buttermilk to the boiling milk solids should start to form "curds" and "whey". it will look sort of like cooked egg whites suspended in a slightly thick yellowish liquid. remove from the heat and stir in salt.
  • 4 pour mixture though cheesecloth and let curds collect and whey drain off. run cold water over it so it's easy to handle and squeeze out whey until bundle feels firm.

  • 1/4 cup mustard seeds
  • 2 teaspoons mustard powder
  • 1/4 cup water
  • 1/4 cup dry wine
  • 1/3 cup raspberry vinegar

  • 1/2 cup raspberry jam, seedless

Recipe

  • 1 blend mustard seeds, mustard powder and water in blender for 1 minute until you have a coarsely pureed paste.
  • 2 let stand at room temperature at least 2 hours.
  • 3 combine the mustard mixture, wine, vinegar and salt in the top of a small double boiler.
  • 4 cook over boiling water, stirring occasionally, for 10 minutes or until slightly thickened.
  • 5 return to the blender.

  • 8 refrigerate in a covered container at least overnight or keep up to 1 month.

  • 1 cut the avacadoes down the middle, around the seed and twist to split the avacadoes in half. spoon out the seeds, saving them for later. peel avacadoes and chop them as chunky or small as you like. mash, if desired.

Polynesian Meatballs

Ingredients

  • 1 (8 ounce) can water chestnuts, drained and finely chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar, packed
  • 2 garlic cloves, minced
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon onion powder
  • 2 lbs lean ground beef
  • 1 cup apricot jam
  • 3 tablespoons cider vinegar
  • 1/4 teaspoon paprika

  • 1 combine first 6 ingredients in a large bowl.
  • 2 add ground beef. mix well.
  • 3 rol into 1 inch balls, arrange in single layer on ungreased baking sheet.

Honey Bb Wings

  • 20 chicken wings, tips removed
  • 2 cups flour
  • 2 eggs
  • 2/3 cup milk
  • 1 1/2 cups barbecue sauce
  • 1/4 cup honey
  • oil (for deep frying)

Recipe

  • 1 wash the chicken wings, then remove the wing tips; cut the other
  • 2 two pieces in half. shake off the excess water.
  • 3 place the eggs and milk in a bowl and mix well. set aside. mix
  • 4 together the bbq sauce and honey. set aside.
  • 5 put the flour into a bag, then shake the wings in it, to lightly
  • 6 coat. roll the wings in the egg wash, then toss them back into the
  • 7 bag. you want a fairly heavy coating of flour so the bbq sauce has
  • 8 something to hang onto. repeat 2-3 times.
  • 9 heat a large skillet or use your deep fryer. heat oil until it's
  • 10 very hot (around 350f). fry the wings until they're golden brown.
  • 11 remove and drain on paper towels.
  • 12 preheat oven to 325°f dip each wing in the bbq sauce and place on
  • 13 a greased cookie sheet. make sure the pieces don't touch each other.
  • 14 bake for 15-20 minutes, until they no longer look shiny.
  • 15 enjoy.

Smoky Corn Salsa (bon Appétit)

Ingredients

  • 2 red bell peppers, quartered, seeded
  • 3 ears fresh corn, husked
  • 1 bunch green onion, trimmed
  • 4 tablespoons about olive oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh lime juice
  • 1 tablespoon bottled chipotle hot sauce
  • 2/3 cup chopped fresh cilantro

Recipe

  • 1 prepare barbecue (high heat). brush bell peppers, corn, and green onions with some olive oil. grill vegetables until well charred in spots, turning occasionally with tongs and removing pieces as they brown, 5 minutes for green onions, 10 to 15 minutes for bell peppers and corn. cool slightly. cut bell peppers and green onions into 1/3-inch pieces. cut corn off cob.

  • 1 in a small bowl, mix cheeses together.
  • 2 beat in beer to make a creamy spreading consistency.
  • 3 add garlic salt, tabasco, liquid smoke and chili powder.
  • 4 cover and chill several hours or overnight.
  • 5 take out of refrigerator about 1/2 hour before serving.
  • 6 garnish with crumbled cooked bacon if you wish.

Festive Cheese Spread

Ingredients

  • 1 (8 ounce) package light cream cheese, softened
  • 2 -4 ounces cheddar cheese, finely shredded (1/2-1 cup, to taste)
  • 1/4 cup finely diced dried apricot
  • 1/4 cup dried sweetened cranberries, chopped
  • 2 -3 tablespoons scallions, very thinly sliced with some of the green
  • 1/2 cup sliced almonds (only if you are going to roll it as a cheese ball or log)

Easy Cheesy Spinach And Bacon Dip

  • 1 lb velveeta cheese, cut into 1/2 inch cubes
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 4 ounces cream cheese, cut up

  • 8 slices bacon, crisply cooked, drained and crumbled

Recipe

  • 1 cut 1 lb. velveeta cheese into 1/2 inch cubes; place in a large, microwavable bowl.
  • 2 add spinach, thawed and well-drained, cream cheese, diced tomatoes and chilies and bacon.
  • 3 microwave on high for 5 minutes or until velveeta is completely melted and mixture is well-blended, stirring after 3 minutes.
  • 4 serve hot with tortilla chips or assorted cut-up fresh veggies.

Mojito Dipping Sauce

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 2 tablespoons sweet onions, minced
  • 2 garlic cloves, minced
  • 3 tablespoons light rum
  • 2 limes, zest and juice
  • 2 tablespoons fresh mint leaves, finely minced
  • 1 tablespoon sugar
  • 1 cup mayonnaise
  • salt and pepper

Recipe

  • 1 heat olive oil in a small saucepan over medium-high heat. add onion and cook for 2-3 minutes, stirring occasionally. add garlic and cook for another minute.
  • 2 remove saucepan from heat and add rum and place back on burner. cook until most of liquid has evaporated. transfer mixture to a medium mixing bowl. cool for about 20 minutes.
  • 3 when room temperature, add zest and juice of limes, mint leaves, sugar, and mayonnaise.

  • 1 tablespoon extra virgin olive oil
  • 2 leeks, and light green parts only, chopped
  • 3 garlic cloves, minced
  • 1/4 teaspoon pepper

  • 2 (130 g) packages soft fresh goat cheese
  • 2 teaspoons finely chopped fresh herbs (such as rosemary thyme or sage)

  • 1 in skillet heat oil over med heat.
  • 2 fry leeks garlic pepper salt and cayenne pepper, stirring often, until softened and golden; about 6 minute.

Smoked Trout Appetizer Toasts

  • 5 ounces smoked trout, flaked
  • 1 1/2 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 8 radishes, sliced

  • 3 lbs chicken drummettes (i used party wings)
  • 1/2 cup soy sauce
  • 3 limes, juice of
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 2 tablespoons ginger, minced
  • 3 tablespoons cilantro, chopped

Recipe

  • 1 put cut up chicken in zip lock bag. mix marinade ingredients together in small bowl and pour over chicken. refrigerate for a few hours (if you have time, 3-5 hours -- if you don't do just 1 hour).
  • 2 when ready, pour bag into crockpot and cook on low for 8 hours, stir a few times if possible.

Eggplant (aubergine) Appetizer - Romanian Style - (vinete)

  • 1 large eggplant
  • 1 medium onion, grated
  • 1 teaspoon lemon juice
  • 1/4 cup corn oil
  • salt

Recipe

  • 1 broil eggplant on all sides until well cooked -- turning frequently as it cooks.
  • 2 scrape the purple skin off, and discard skin.
  • 3 mash eggplant well with a wooden spoon,.
  • 4 add salt and pepper, to taste.
  • 5 mix grated onions with one tsp of mazola oil.
  • 6 add to mashed eggplant.

  • 1/2 cup bottled salsa
  • 8 (6 inch) fat free tortillas
  • 1 cup chopped smoked turkey ham
  • 1/2 cup fresh corn kernels
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup shredded monterey jack pepper cheese

Recipe

  • 1 spread 2 tablespoons salsa over each of 4 tortillas.
  • 2 top each of the 4 tortillas with 1/4 cup ham, 2 tablespoons corn, 1 tablespoon cilantro, 3 tablespoons cheese, a little sprinkle of salt and pepper if desired, and a tortilla.
  • 3 heat a nonstick skillet over medium heat until hot.
  • 4 add 1 quesadilla; cook 2 minutes on each side or until crisp.
  • 5 repeat with remaining quesadillas.
  • 6 cut each quesadilla into 6 wedges and serve.

Smoked Turkey Cheese Ball

  • 1 tablespoon heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 large vidalia onions, thinly sliced
  • 1 tablespoon thyme
  • 1 teaspoon kosher salt
  • 1 -2 teaspoon black pepper

Recipe

  • 1 in a food processor, combine flour, butter, salt and sugar; pulse until if forms coarse meal. continue pulsing and add water 1 tbls at a time, until meal moistens into dough. form dough into disc; wrap in plastic.
  • 2 refrigerate at least 30 minutes.
  • 3 meanwhile, in a large saute pan over med flame, heat oil and butter. once hot, add onions; cook slowly until golden brown, about 25 minutes. stir in thyme, salt and pepper. set aside.
  • 4 preheat oven to 375 degrees. roll out dough on a floured piece of parchment into 14 to 15 inch circle (doesn't have to be exact!).
  • 5 place cooled onion mixture in center, fold over edges about 2 inches. in a small bowl, combine egg yolk and heavy cream; brush mixture over edges of dough. bake until golden brown, 20 to 25 minutes. serve warm.

Honey Mustard

Grilled Chicken Quesadillas

  • 16 ounces shredded sharp cheddar cheese
  • 1 bunch fresh cilantro
  • 3 -4 skinless chicken breast halves
  • 1 bunch green onion
  • chili powder
  • cooking spray
  • flour tortilla
  • salt
  • sour cream
  • salsa

Recipe

  • 1 remove skin from chicken breasts.
  • 2 place in boiling water with 2-3 teaspoons of chile powder.
  • 3 boil until no longer pink, remove from water and let cool.
  • 4 once cool, remove from bone and place in food processor.
  • 5 add cilantro, green onion, salt in with chicken.
  • 6 sprinkle with chile powder to taste.
  • 7 pulse until mixture is pretty fairly ground up.
  • 8 place in large bowl and add cheese. stir to combine well.
  • 9 heat a large frying pan. spay one tortilla with nonstick spray.
  • 10 place in pan. layer chicken mixture onto tortilla and top with another. spray the top of that one.
  • 11 once the underside is a golden brown, carefully flip with a large spatula.
  • 12 remove from heat and use a pizza cutter to cut into triangles.
  • 13 place in a warm oven until you have used all the ingredients.
  • 14 serve with salsa and sour crem.

Panko Cucumber Nuggets

  • 1 cucumber
  • 1/2 cup flour
  • 1 egg
  • 1 cup panko breadcrumbs, bread crumbs
  • 2 tablespoons parmesan cheese
  • 1/2 teaspoon cilantro
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon chili powder
  • vegetable oil
  • ranch dressing (or salad dressing of your choice)

Recipe

  • 1 peel cucumber and cut into 1 inch chunks.
  • 2 put the flour in one bowl, the egg in a second (and scramble it with a fork a little), and put the panko, cheese, and spices in a wide shallow bowl.
  • 3 coat cucumber chunks in flour, then the scrambled egg, then rolls in the panko spice mixture to coat.
  • 4 place your coated chunks on a plate and put in the fridge for 20 minutes.
  • 5 put enough oil into a small frying pan to cover the bottom generously. put on low to medium heat. i tested my oil with a bit of breadcrumbs to see when it was hot enough.
  • 6 fry your chunks in batches, making sure to brown each side. i found it easiest to turn them with some tongs.
  • 7 place finished nuggets on a plate with a paper towel to drain off any extra oil.
  • 8 stick toothpicks in them and put a little dressing in a bowl for dipping. crispy, crunchy on the outside, juicy and warm on the inside.

Pear And Caramelized Onion Pizzette

  • 1 large sweet onion
  • 2 tablespoons olive oil
  • 6 -8 small pita bread
  • 3 large pears, ripe but firm
  • 1/8 teaspoon salt
  • fresh ground black pepper
  • 1 tablespoon butter
  • 2 -3 tablespoons finely chopped fresh thyme, divided
  • 1/2 lb gruyere (you can also use a mixture of your favourite cheeses, grated.) or 1/2 lb emmenthaler cheese (you can also use a mixture of your favourite cheeses, grated.)

Recipe

  • 1 peel and thinly slice onion. heat oil in a large frying pan over medium heat, add onions. lower heat as needed and saute, stirring often for 15-20 minutes or until wilted and golden.
  • 2 peel, core and thinly slice pears. when onions are golden, stir in salt and pepper; remove from pan.
  • 3 preheat oven to 450 degrees.
  • 4 add butter to pan; return to medium heat.
  • 5 when bubbly, add pears and saute for 8-12 minutes, turning frequently until softened and lightly browned. cool on plate.
  • 6 lay out your pitas, and spread a small amount of grated cheese on each.
  • 7 dividing equally, spread each round with onion, then add pear and thyme. top with remaining cheese, and a little more freshly ground black pepper.
  • 8 bake 10-12 minutes, or until pizzettes are golden. serve right away, whole or cut in half topped with a sprinkling of thyme.

Easy Cheesy Party Dip

  • 4 in the crockpot pour the salsa on the cheese cubes and stir after it has cooked for 10 or 20 minutes on low.

  • 1 preheat a large nonstick skillet over medium-high heat. add tomatillos cut side down. brown on both sides, turning over halfway through, about 7 minutes total.

  • 3 add garlic, chiles, water, salsa seasoning and salt.
  • 4 process to a coarse puree.
  • 5 let cool before serving.

Grandma Mona's Dip

Pear And Bacon Salad With Mustard Dressing

  • 1 place the pear slices and fresh herbs in a bowl and toss to mix well.
  • 2 heat one teaspoon of olive oil in a non-stick frying pan. add the bacon and fry for 2-3 minutes on each side, until crisp and golden.
  • 3 add the bacon to the salad and toss together.
  • 4 to make the dressing, place the vinegar, mustard, olive oil, parsley, cheese and salt and freshly ground black pepper in a bowl, and whisk to combine.
  • 5 to serve, drizzle the dressing over the bacon and pear salad.

Mom's Bruschetta

  • 2 saute chopped garlic and olive oil over medium heat.

Seafood And Chicken Rolls

  • 2 boneless skinless chicken breast halves
  • 1 teaspoon soy sauce
  • 4 imitation crab sticks (or seafood sticks)
  • 4 spring roll wrappers
  • 1/2 teaspoon cornflour (cornstarch)

  • oil (for deep frying)

Recipe

  • 1 slice each breast horizontally to give you 2 thin slices from each and then brush each slice with soy sauce and place one thawed crab or seafood stick on each slice of chicken and roll firmly.
  • 2 place roll diagonally across spring roll wrapper and fold in ends and roll up securely and then seal end with combined cornflour and water.
  • 3 deep fry rolls in hot oil until golden and cooked through, approximately 3-5 minutes (this will depend on the thickness of your chicken breasts - the thinner the quicker) and then drain on absorbent paper, you may need to do these in batches depending on the size of your deep fryer.

Smoky Corn Salsa With Deep Fried Tortillas

Ingredients

  • 2 corn on the cob
  • 3 tablespoons extra virgin olive oil
  • 1 red chili pepper, seeded and chopped
  • 1 red onion, sliced thin
  • 1 beef tomato, skinned seeded and chopped
  • 1 lime, juice and zest of
  • 3 tablespoons coriander
  • vegetable oil (for deep frying)
  • 2 flour tortillas

Recipe

  • 1 remove any husk or threads from the corn.
  • 2 brush the cobs with the olive oil and grill for about 15 minutes, turning constantly.
  • 3 remove from the grill and strip the kernels from the cob.
  • 4 add the chili, onion, tomato, remaining olive oil, lime zest, lime juice and coriander. set aside to let the flavours develop (about an hour seems to give the best results).
  • 5 heat the oil in a pan or wok.
  • 6 rip the tortillas into pieces and deep fry until crispy and golden. lift out and drain.

  • 2 -4 tablespoons milk

  • 1 in a heavy, medium saucepan combine american cheese, wine, mustard, worcestershire sauce, and chipotle peppers. cook and stir over medium-low heat until melted and smooth.
  • 2 stir in enough of the milk to reach desired consistency.
  • 3 transfer to a fondue pot; keep warm over a fondue burner and serve immediately. if the fondue mixture thickens, stir in some additional milk.

  • 2 ripe hass avocadoes (avocados should be turning dark brown and pliable)

  • 1 split avocado in half.

  • 3 score avocado meat with knife vertically and then horizontally.

  • 1 clove garlic, crushed

  • 1/2-1 small fresh red chile, chopped (with or without seeds - your preference)
  • 1 -2 green onion, chopped

  • 1 cup queso casero cheese or 1 cup queso fresco or 1 cup feta cheese or 1 cup muenster cheese, grated

  • 1 cover the whole potatoes with cold, salted water, boil until cooked through. remove from heat, drain and cool. peel the potatoes and cut in half length-wise or into rounds.

  • 1 pear, peeled and quartered

  • 2 egg whites

  • 1 heat water and sugar in a pan until dissolved. increase the heat, boil vigorously for 5 minutes, reduce to a simmer, add pear and poach for 10 minutes. drain and dice the pear and put the pieces in 2 buttered ramekins.
  • 2 melt the butter in a small pan, add flour, and stir until absorbed. gradually add milk. stir and cook until thick. add blue cheese and stir until melted. remove from heat and stir in egg yolk.
  • 3 preheat oven to 350 degrees f. whisk egg whites until stiff but not dry. gently fold 2 tbsp of eggw hite into the sauce to loosen the mixture. fold in remaining egg whites. spoon into ramekins and place on a cookie sheet.

  • 3/4 cup water
  • 3 cups cider vinegar or 3 cups vinegar
  • 6 tablespoons kosher salt (preferred) or 6 tablespoons uniodized salt

  • 2 texas- 1015 sweet onions, peeled,sliced 1/4 inch thick,and separated into rings
  • 2 sweet red onions, fixed the same way
  • 1 garlic scapes (entire thing) or 1 clove of mild garlic, peeled and quartered lengthwise

Recipe

  • 1 wash a half-gallon jar and its lid in hot soapy water; rinse well with very hot water, and let drain.
  • 2 combine water, vinegar, salt, and sugar in a stainless steel saucepan.
  • 3 bring to a boil for about 5 minutes, stirring occasionally to ensure that salt and sugar dissolve.
  • 4 let cool just slightly while performing the next step.
  • 5 fill the jar half full with both types of onions.
  • 6 add green garlic shoot, and fill with remaining onions; or do it by quarters, with the ripe garlic clove.
  • 7 pack the onions down until there is about 1/2" to 3/4" of head space below the rim of the jar.
  • 8 slowly pour the hot syrup over the onions, shaking the jar slightly while pouring to release air bubbles.
  • 9 ,until onions are covered by about 1/4".
  • 10 wipe rim of jar, cover with lid, and let stand until cooled to room temperature.

  • 1 use a 1 gallon jar or other glass container of desirable size. wash and slice equal amounts of cucumbers and onions into jar. don’t peel cucs. add a couple green peppers cut into strips. combine and pour over the cucs, onions and peppers the sugar, vinegar, celery seed, mustard seed and pickling salt. refrigerate. no cooking required!
