Polynesian Meatballs

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 (8 ounce) can water chestnuts, drained and finely chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar, packed
  • 2 garlic cloves, minced
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon onion powder
  • 2 lbs lean ground beef
  • 1 cup apricot jam
  • 3 tablespoons cider vinegar
  • 1/4 teaspoon paprika

Recipe

  • 1 combine first 6 ingredients in a large bowl.
  • 2 add ground beef. mix well.
  • 3 rol into 1 inch balls, arrange in single layer on ungreased baking sheet.
  • 4 bake in 375 degree oven for about 15 minutes or until meatballs are no longer pink inside.
  • 5 apricot sauce: combine jam, vinegar and paprika in small bowl. makes about 1 cup. serve with meatballs.
