Polynesian Meatballs

Ingredients
- 1 (8 ounce) can water chestnuts, drained and finely chopped
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar, packed
- 2 garlic cloves, minced
- 1 teaspoon parsley flakes
- 1/2 teaspoon onion powder
- 2 lbs lean ground beef
- 1 cup apricot jam
- 3 tablespoons cider vinegar
- 1/4 teaspoon paprika
Recipe
- 1 combine first 6 ingredients in a large bowl.
- 2 add ground beef. mix well.
- 3 rol into 1 inch balls, arrange in single layer on ungreased baking sheet.
- 4 bake in 375 degree oven for about 15 minutes or until meatballs are no longer pink inside.
- 5 apricot sauce: combine jam, vinegar and paprika in small bowl. makes about 1 cup. serve with meatballs.
