Lime Pickles

Total Time: 505 hrs Preparation Time: 1 hr Cook Time: 504 hrs

Ingredients

  • 10 limes
  • 1 kg coarse salt
  • 500 ml olive oil (not virgin)
  • 1 tablespoon turmeric
  • 1 tablespoon cumin seed
  • 3 dried red chili peppers (crumbled)
  • 3 (350 ml) jars

Recipe

  • 1 cut limes into 8ths length-wise and cover bottom of a large dish with them. i use a big casserole dish. cover with salt.
  • 2 put into freezer overnight.
  • 3 thaw completely.
  • 4 put into colander and rinse under cold water. shake dry.
  • 5 put 1/3 into @ clean jar.
  • 6 meanwhile, pour oil into measuring jug, stir in turmaric, cumin seeds and crumbled peppers.
  • 7 pour oil to the very top of jars, limes must be covered.
  • 8 leave in dark place for 3 wks. enjoy!
