Pesto Bruschetta

Ingredients

  • 1 loaf french bread, cut into slices
  • 7 ounces pesto sauce
  • 2 medium tomatoes, seeded and finely chopped
  • 1 (4 ounce) package feta cheese, crumbled

Recipe

  • 1 • arrange bread slices on an ungreased baking sheet. spread with pesto; top with tomatoes and cheese. broil 4 inches from the heat for 3-5 minutes or until edges are lightly browned. yield: 29 appetizers.

Pesto Cheese Ball, Party Perfect!

Ingredients

  • Servings: 6
  • 3 1/2 cups fresh parsley sprigs, trimmed
  • 1 cup loosely packed fresh basil leaf, trimmed
  • 4 ounces provolone cheese, shredded
  • 1/2 cup pine nuts, toasted, chopped
  • 1 (8 ounce) package cream cheese, softened
  • 1 1/2 teaspoons finely chopped fresh garlic
  • 1 dash ground red pepper
  • crackers, thin or french bread, slices thin

Recipe

  • 1 fill 3-quart saucepan with 4 cups water.
  • 2 bring to boil over high heat 4 to 5 minutes.
  • 3 dip 3 cups parsley and basil into boiling water just until wilted about 30 seconds.
  • 4 rinse with cold water. drain well, squeezing out excess liquid.
  • 5 chop wilted parsley and basil leaves.
  • 6 combine wilted parsley and basil, provolone cheese, pine nuts, cream cheese, garlic and red pepper in large mixer bowl.
  • 7 beat at medium speed, scraping bowl often, until well mixed 1 to 2 minutes.
  • 8 shape into ball. cover; refrigerate until firm at least 3 hours.
  • 9 chop remaining parsley. reshape ball, if necessary. roll cheese ball in remaining chopped parsley to coat.
  • 10 serve with crackers or thin french bread slices.

Nashville Spicy Pimento Cheese

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 1 lb sharp cheddar cheese or 16 ounces shredded cheddar cheese
  • 1 (8 ounce) package spicy monterey jack cheese, shredded
  • 1 (8 ounce) package light cream cheese (use less for a chunkier spread)
  • 1 (4 ounce) jar diced pimentos, drained
  • 1/4 cup pickled jalapeno pepper (i use the "no heat" version)
  • spices, to taste*
  • salt & pepper
  • frank's original red hot sauce (about 1 tlbsp)
  • 1/4 cup drained sun-dried tomato, if you like them
  • 1/4 cup light mayonnaise (more if you like it really creamy)

Recipe

  • 1 mix shredded cheeses together in a large bowl.
  • 2 in a food processor blend cream cheese, pimentos, jalepenos, and sd tomatoes if desired.
  • 3 blend shredded cheese mix and cream cheese mix together and then add mayo and spices.

Low-fat Fried Chicken Strips

Ingredients

  • Servings: 4
  • 1/4 cup flour
  • 1/4 cup dry breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 lb chicken tenders
  • 1/2 cup low-fat buttermilk
  • olive oil (the actual recipe calls for 1 t. but i think you need some more to get it the crisp "fried")

Recipe

  • 1 combine the first 6 ingredients in a shallow dish, and set aside.
  • 2 combine the chicken and the buttermilk in a plastic zip-top bag; seal and marinate in refrigerator 30 minutes.
  • 3 remove the chicken and discard the marinade.
  • 4 pour olive oil in skillet to just barely covering the entire bottom of the pan.
  • 5 heat oil over medium heat.
  • 6 dredge a few chicken strips at a time in breadcrumb mixture, tossing to coat.
  • 7 add chicken to the pan, and cook 3 minutes on each side or until done.

Pesto Brie Bruschetta

  • 8 slices french bread
  • 1/2 cup basil pesto
  • 1 (8 ounce) wedge brie cheese
  • 1 cup cherry tomatoes, chopped

Recipe

  • 1 spread each slice of bread with some pesto and top with cheese slices, cut to fit.
  • 2 place in toaster oven and toast until bread is golden brown and cheese is melted and bubbly.
  • 3 top each slice with some cherry tomatoes and serve!

Peach Melba Planked Brie

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 2 (4 1/2 ounce) wheels brie cheese (rondelles)
  • 1/2 pint fresh raspberry
  • 1/2 cup bbq peach and bourbon barbecue sauce
  • 2 teaspoons chopped fresh thyme
  • black pepper, from the grinder

Recipe

  • 1 you will need one bbq grilling plank (oak, maple or cedar).
  • 2 preheat the grill to medium-high (450 f/230 c).
  • 3 place the brie wheels evenly spaced on a pre-soaked plank.
  • 4 in a medium bowl, combine the raspberries, peach and bourbon bbq sauce, fresh thyme, and season to taste with freshly ground black pepper.
  • 5 spoon the berry mixture evenly on top of the wheels (rondelle) of brie cheese.
  • 6 place the planked brie on the grill and close the lid.
  • 7 bake for 10 รข€“ 15 minutes, checking frequently to see that the plank has not caught fire. if it does, reduce grill heat and use a spray bottle of water to douse the flames.
  • 8 carefully open lid and check the cheese. it is ready when the sides are bulging and rind is golden brown.
  • 9 take care not to leave it until the cheese bursts or the liquid insides will run off the plank and into the fire. such a waste.
  • 10 remove planked cheese from the grill. serve on the plank. with covering of your choosing protect your table from the hot, charred plank. (i usually have a second plank to set the hot, charred plank on it.).
  • 11 serve with freshly baked and sliced baguette and/or crackers and plenty of napkins.

Onion Lovers' Caramelized Onions

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • 5 lbs onions, approximately (around 6 or so large)
  • 1/3-1/2 cup olive oil
  • 1 tablespoon salt

Recipe

  • 1 trim onions then cut in half. cut into 1/4 inch slices. place in large, heavy pot -- cast iron or other.
  • 2 pour oil over onions, and add salt. stir and set over medium flame. cover with lid, stirring every 15 minutes or so to keep from sticking. onions will begin to soften.
  • 3 20 to 30 minutes later, when onions are soft, reduce heat to low. continue stirring every 15 minute.
  • 4 after 50 min., onions will be quite moist. remove lid and increase heat to medium. stir occasionally until moisture has begun to evaporate and onions begin to become golden, about 30 minutes more.
  • 5 reduce heat again, continue cooking, and stir every 15 minutes until they get a deeper brown shade. continue about 2 more hours (around 3 hours total.).
  • 6 watch carefully to make sure the onions don't dry out. cook until they have become a deep brown color, up to 1 hour longer. total cooking time is close to 4 hours.

Onion Jam

Ingredients

  • Servings: 12
  • 1/4 cup olive oil
  • 6 onions, medium, sliced thinly
  • 1 pinch sea salt
  • 1 tablespoon balsamic vinegar
  • 1/4 cup port wine
  • 1 sprig fresh thyme
  • 1/2 cup muscovado sugar
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup tomato, finely chopped

Recipe

  • 1 heat oil in heavy frying pan, then add onions & saute untils slightly brown.
  • 2 season with salt, then reduce heat & continue to cook, stirring constantly, until caramelized & tender.
  • 3 add rest of ingredients except the tomato, & cook on low heat for 30 minutes, stirring occasionally.
  • 4 add tomato & cook 15 more minutes.
  • 5 remove from heat & let cool.
  • 6 store in a jar in the refrigerator for up to 2 weeks.

Pesto And Goat Cheese Quesadillas

Ingredients

  • Servings: 6
  • 2 ounces goat cheese (adjust amount to suit size of tortilla)
  • 3 tablespoons pesto sauce, preferrably homemade (adjust amount to suit size of tortilla)
  • 2 flour tortillas
  • 2 tablespoons olive oil (good quality)

Recipe

  • 1 heat olive oil in a skillet over med/med high heat.
  • 2 meanwhile, spread one side of one tortilla with goat cheese. spread one side of the other tortilla with pesto.
  • 3 sandwich tortillas together with the filling on the inside.
  • 4 when oil is hot, add the quesadilla to the pan. cook until the bottom side is crispy and golden brown.
  • 5 flip quesadilla and continue cooking on the remaining side. if necessary, you may add a splash more olive oil at this step.
  • 6 when quesadilla is golden brown and crispy on both sides, remove from pan and drain on a paper towel.
  • 7 slice into 6-8 servings (depending on size) and serve hot.

Pancakes (crepes) Filled With Spinach (filling Only)

Ingredients

  • Servings: 6
  • 8 ounces fresh spinach or 8 ounces frozen spinach
  • 2 ounces butter
  • salt
  • black pepper
  • grated nutmeg
  • 1 ounce flour
  • 1/2 pint hot milk
  • 4 ounces grated gruyere cheese

Recipe

  • 1 press the cooked spinach, chop finely and toss over a medium heat for 2 or 3 minutes until dry in 1 oz butter.
  • 2 add the seasoning and a pinch of nutmeg.
  • 3 in a second pan, melt the remaining butter, work in the flour, add milk, and cook until thick, stirring briskly.
  • 4 add the spinach and simmer for 5 minutes.
  • 5 remove from the heat and beat in two thirds of the cheese, correct the seasoning, put a tablespoon of filling centrally on each pancake, roll up and place in a buttered ovenproof dish.
  • 6 cover with remaining sauce, sprinkle with remaining cheese, reheat and brown under a hot grill.

French Onion Fondue

Total Time: 2 hrs 45 mins Preparation Time: 15 mins Cook Time: 2 hrs 30 mins

Ingredients

  • 1/4 cup unsalted butter
  • 5 lbs sweet onions, thinly sliced (about 6 onions)
  • 1/4 cup dry sherry
  • 1/4 cup sherry wine vinegar
  • 1/4 cup worcestershire sauce
  • 2 teaspoons thyme leaves
  • salt & freshly ground black pepper
  • 1 1/2 cups chicken broth, preferably homemade
  • 2 cups coarsely grated gruyere cheese
  • 1 teaspoon finely chopped flat leaf parsley
  • 1 baguette, sliced and lightly toasted

Recipe

  • 1 in a large pot, melt the butter over low heat. add the onions and cook over low heat, stirring frequently, until they are deeply browned, about 2 hours.
  • 2 using a wooden spoon, stir in the dry sherry, sherry vinegar, worcestershire, thyme and a pinch of salt and pepper. cook over low heat until the liquid is reduced slightly, about 2 minutes. add the chicken broth and reduce slightly, about 5 minutes.
  • 3 preheat the broiler. divide the caramelized onions between two shallow, heatproof bowls or serving dishes (such as gratin dishes). cover with the gruyère, dividing it equally between the dishes. broil until the cheese is bubbly and golden brown, about 4 minutes. garnish with the parsley. cool slightly; serve with the baguette slices for dipping.

Hard-cooked Egg Pate

Ingredients

  • 3 large eggs, hard-cooked, peeled, and halved lengthwise
  • 3 tablespoons unsalted butter, at room temperature
  • 2 tablespoons minced fresh chives
  • 1/4 teaspoon kosher salt (or more to taste)
  • minced fresh chives, for garnish (or thin radish slices)
  • 12 slices pumpernickel party bread or 12 slices crackers

Recipe

  • 1 carefully remove the yolks from the whites and very finely chop the whites.
  • 2 with the back of a spoon, press the yolks through a sieve into a small bowl.
  • 3 add the whites, butter, chives, and salt; mash with a fork until blended.
  • 4 taste and add more salt, if needed.
  • 5 cover and refrigerate until ready to use.
  • 6 let the pate come to room temperature before serving.
  • 7 may garnish with chives or radish slices.
  • 8 spread on bread or accompany with bread or toast and serve.

Margarita " Jigglers "

Ingredients

  • 3 (5/8 ounce) boxes sugar-free lime gelatin
  • 1 ounce unflavored gelatin
  • 1/2 cup lime juice
  • 2 1/2 cups tequila
  • 3 cups boiling water

Recipe

  • 1 mix jello and gelatin in boiling water and stir until dissolved.
  • 2 add lemon juice and tequila, stirring well.
  • 3 pour into large, shallow foil pan and refrigerate until firm.
  • 4 using a knife, score horizontally and vertically to make jiggler blocks. i've tried small cookie cutters, but there is too much wastage. enjoy.

Nasturtium Canapes

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces cream cheese, room temperature
  • 3 tablespoons finely chopped chives
  • 3 -5 tablespoons milk
  • 2 loaves bread, of your choice (see below)

Recipe

  • 1 mix the cheese with the chives and 3 tablespoons of milk until smooth. if this is too thick add more of the milk.
  • 2 using a serrated knife, trim your bread. you can use a baguette and slice thinly, leaving the crust. or use a hearty wheat, honey wheat or even oatmeal bread and remove the crust then cut into small squares.
  • 3 spread the cream cheese over your bread piece, not quite to the edges. at this point you can place on baking sheets and chill for up to 6 hours, or use immediately.
  • 4 pick your nasturtium blooms and gently rinse. place one bloom on each piece of bread, or careful separate the petals and arrange in a design on top of the cream cheese.
  • 5 you can also add small herb leaves, such as thyme, oregano or chive stems to decorate.
  • 6 serve your canapés on a pretty plate or platter lined with a paper doily. these are great for summer tea parties!

Cucumber-red Pepper Raita

  • 1 large cucumber, seeded and diced (about 1 1/2 cups)
  • 1/2 cup diced red bell pepper
  • 1/2 cup plain yogurt

  • 1/4 teaspoon ground cumin
  • 1 clove garlic, crushed
  • 1/8 teaspoon salt

Recipe

  • 1 mix all ingredients in a medium sized bowl.
  • 2 cover and chill until ready to serve.

Pesto Cheese

  • 3 tablespoons butter, softened
  • 250 g cream-style cottage cheese
  • 50 g pine nuts, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons tomato paste
  • black pepper

Recipe

  • 1 beat butter & cottage cheese together until smooth.
  • 2 mix in the pine nuts, basil & tomato paste, season lightly with pepper.
  • 3 chill before serving.

Cucumbers In Sour Cream

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 2
  • 2 cucumbers
  • 1 medium onion, sliced or chopped
  • 1 cup low-fat sour cream or 1 cup fat free sour cream
  • 3 packets equal sugar substitute
  • 1 tablespoon vinegar

Recipe

  • 1 either clean cukes thoroughly or peel them.
  • 2 in plasticware, mix the equal, vinegar, and sour cream.
  • 3 chop or slice the onion.
  • 4 slice the cucumber 1/8 to 1/4 of an inch thick.
  • 5 stir onion and cucumber into sour cream mix.
  • 6 refrigerate a minimum of two hours before serving.

French Onion Dip

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2 teaspoons sugar
  • 3 large yellow onions, finely diced (about 1 quart)
  • 1 tablespoon butter
  • 1/4 teaspoon baking soda
  • kosher salt
  • fresh ground black pepper
  • 1/2 cup water
  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon worcestershire sauce
  • 1/2 ounce finely grated parmesan cheese
  • 1 tablespoon minced chives

Recipe

  • 1 heat sugar in a 12-inch stainless-steel skillet (not non-stick; you won't be able to see the color change) over medium-high heat until completely melted and light brown, about 3 minutes. immediately add onions; stir with wooden spoon (metal will cause caramel to seize and crystallize) until onions are coated in sugar. add butter, baking soda, 1 teaspoon kosher salt, and a few grinds of black pepper. toss to combine. cook, shaking pan occasionally until onions release all their liquid and brown fond covers bottom of pan, 6 to 8 minutes.
  • 2 add 2 tablespoons water and shake pan while scraping with wooden spoon to deglaze bottom of pan. continue cooking, shaking occasionally until fond begins to accumulate again, 3 to 5 minutes. repeat deglazing and cooking steps three more times until all the water has been used and onions are deep brown. transfer to medium mixing bowl and allow to rest at room temperature for 5 minutes.
  • 3 combine sour cream, mayonnaise, lemon juice, parmesan, and worcestershire and whisk. stir in onions. for smoother texture, run through blender or food processor. chill in a sealed container for at least 1 hour and up to 5 days (flavor will improve with time). spoon into a bowl, sprinkle with chives, and serve with chips.

Holy Mole Pecans

Ingredients

  • 1 large egg (2 tbl)
  • 1 teaspoon vanilla extract
  • 2 cups raw pecan halves
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin

Recipe

  • 1 preheeat the oven to 225. line a baking sheet with parchment paper.
  • 2 place the egg in a large stainless steel bowl and whip until frothy. whip in the vanilla, then gently add the pecans and toss until completely coated with the mixture.
  • 3 place the remaining ingredients in a medium size bowl and toss until well combined. add the sugar mixture to the pecans, a quarter of it at a time, and very gently toss until well coated.
  • 4 transfer the pecans to the prepared sheet and arrange in a single layer. try to not let the pecans touch each other. place the sheet in the oven and cook, stirring every 15 minutes, until the coating is lightly colored and dried out, about 1 hour and 15 minutes trotal.
  • 5 remove from the oven, immediately loosen the nuts with a metal spatula, and set aside to cool before serving.

Hard Boiled Egg Filled With Tomato And Parmesan

Ingredients

  • Servings: 3
  • 3 eggs
  • 1/2 tomato
  • parmesan cheese (can be any kind)
  • 1 pinch salt

  • 1 fill your boiling pan 3/4 way with water. put eggs in the water before boiling. then, bring to a boil. once water is boiling, reduce heat and let sit for about 3-5 minutes. you're eggs are done. peel the shells of the eggs. slice each egg in half. with a spoon take out the yolk.
  • 2 take your tomato and cut into fine pieces. chop with knife to get small cubes. fill your egg with as much tomato in the wholes as you want. sprinkle your choice of cheese on the top and viola! you have your appetizer.
  • 3 *by increasing your number of eggs and tomato your serving size will increase.

Pesto & Sun-dried Tomato Baguette

Ingredients

  • 1 loaf french baguette
  • 1 (8 ounce) jar pesto sauce
  • 1 (8 ounce) jar sun-dried tomatoes
  • 1 (16 ounce) package mozzarella cheese

Recipe

  • 1 preheat oven to 250 degrees.
  • 2 slice bread as thinly or thickly as desired.
  • 3 spread each slice with pesto sauce.
  • 4 top with sundried tomatoes, and cheese.
  • 5 bake until cheese is melted.

Pancakes Bokolgny Style

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 3 eggs
  • 1 cup water
  • 1 cup all-purpose flour
  • 1 pinch salt
  • peanut oil, for greasing pan
  • 1/2 lb veal stew meat, cut into 1-inch cubes
  • 1/2 lb boneless skinless chicken breast, cut into 1-inch cubes
  • 2 cups chicken stock
  • 3 cups paprika gravy (see recipe in this cookbook)
  • salt & freshly ground black pepper
  • 1 tablespoon freshly rendered lard
  • 1 cup sour cream

Recipe

  • 1 the pancakes:.
  • 2 place the eggs in a blender. add the water, flour, and salt. blend until smooth. over a medium burner, heat a 10-inch silverstone-lined slope-sided frying pan. this will give you an 8-inch round pancake. oil the pan with a bit of the peanut oil and pour in about 3 tablespoons of the batter. do this quicklyand tilt the pan so that the batter covers the pan evenly. cook on one side only, and only until the top is dry. the pancakes should not be at al browned or too dry, so be sure that the heat is not too high. stack the cooked pancakes as you cook them, separating them with waxed paper.
  • 3 the filling:.
  • 4 simmer the veal and chicken in the chicken stock until just cooked, about 15 minutes. strain the meat and save the stock for another dish.
  • 5 to make the filling, grind the meats fine in a meat grinder. add 1/2 cup of the paprika gravy and season with salt and pepper.
  • 6 heat a 10-inch frying pan and add the lard. add the filling mixture to the pan and warm it over a low flame.
  • 7 in another 10-inch frying pan, warm the pancakes individually over a low flame.
  • 8 place a warm pancake on a large plate and put about 1/3 cup of filling in the center. fold in the sides of the pancake and roll it up into a rectangle.
  • 9 roll all of the pancakes. place them, 4 at a time, in an oiled frying pan and, with the pan covered, barely toast the bottom of the pancake rolls.
  • 10 keep cooked pancakes warm while making the rest. serve on a warmed plated topped with the remaining paprika gravy, warmed, and a dollop of sour cream.

Cumin And Chive Stuffed Eggs

Ingredients

  • Servings: 4
  • 6 large eggs
  • 1 teaspoon cumin seed, toasted and cooled
  • 3 tablespoons mayonnaise
  • 3 tablespoons plain yogurt
  • 3 tablespoons finely minced fresh chives
  • fresh lemon juice, to taste
  • salt and pepper, to taste

Recipe

  • 1 cover eggs with cold water by 1 inch in a saucepan and bring just to the boil.
  • 2 remove from heat and let eggs stand, covered, for 17 minutes.
  • 3 finely grind cumin seeds with a mortar and pestle.
  • 4 drain eggs, rinse with cold water until no longer hot to the touch.
  • 5 peel eggs, then halve lengthwise.
  • 6 carefully remove yolks and mash in a bowl with a fork.
  • 7 stir in mayonnaise, yogurt, 2 tbs chives, lemon juice, cumin and salt and pepper to taste (filling will be loose).
  • 8 place whites on chilled plates.
  • 9 spoon yolks into whites and sprinkle with remaining tbs of chives.

Devonshire-style Fruit

Ingredients

  • Servings: 4
  • 1/2 cup sour cream
  • 3 cups mixed fruit, chopped,such as grapes,mandarin orange segments,strawberries,blueberries,pineapple,and kiwi
  • 3 tablespoons brown sugar
  • 2 teaspoons liqueur (optional)

Recipe

  • 1 mix sour cream with liqueur (your favorite flavor) if desired.
  • 2 1 hour before serving, place 1/3 cup of chopped fruit in bottom of 4 parfait or other tall glasses.
  • 3 top fruit with 1 tablespoon sour cream and 1 teaspoon brown sugar.

  • 3 set the caps aside in a lightly greased oven pan (some oil will leak out while cooking so make certain the pan has sides all around).
  • 4 chop the stems and a bit of onion.
  • 5 chop them fine.
  • 6 in a mixing bowl, mix up a generous amount of parmesan cheese, spices to taste, the cheddar cheese, the sautéed stems and onion (along with the oil).
  • 7 add cracker crumbs and more oil until the mixture can be molded with your hands and tends to stick together.
  • 8 you'll have to experiment a bit here to find the exact mix.
  • 9 the key is getting it to stick together.
  • 10 divide up the mixture and place it into each of the mushroom caps.
  • 11 fill each cap, pressing down to make certain the mixture fills all the nooks and crannies.

Race Day Spinach Artichoke Dip

Recipe

  • 1 saute onions in butter, adding ingredients while mixing and blending well after each addition. add in this order.
  • 2 spinach, cream cheese, sour cream, 3/4 cup italian cheese, artichoke hearts and crushed red pepper flakes.
  • 3 remove from heat and place in a baking dish or individual crocks.

Sauteed Mushrooms With Tarragon Cream Sauce

Ingredients

  • 6 tablespoons butter
  • 12 ounces button mushrooms
  • 6 morels, sliced
  • 1 shallot, minced
  • 1/2 tablespoon dried tarragon
  • 1 cup beef stock
  • 1/2 cup heavy cream
  • 1/4 cup dry wine
  • crostini
  • salt and pepper

Recipe

  • 1 first wipe the button mushrooms clean with a damp paper towel. slice the morels in half first and check for bugs that might have crawled inside. if using fresh morels, wash them first; if dried you may reconsititue them by soaking them in warm water for 30 minutes.
  • 2 melt 4 tablespoons of the butter in a pan and saute the button mushrooms over medium-high heat for about 5 minutes or until done. set these aside.
  • 3 now melt the remaining 2 tablespoons of butter in the same pan and saute the shallots over medium-high heat for about 4 minutes. add the sliced morels and sauted for a minute more.
  • 4 reduce the heat slightly and deglaze the pan with the wine. stir in the stock and cream. add the tarragon and season to taste with salt and pepper.
  • 5 let the sauce bubble for a few minutes until it reaches the desired consistency, then add the mushrooms back in and heat through.
  • 6 serve with crostini (slices of a french bagette, toasted).

Onion Delight

  • 1/2 cup sugar
  • 1 cup apple cider vinegar
  • 2 cups water
  • 1/2 cup hellmann's mayonnaise

  • 1 chop onions.
  • 2 mix sugar, vinegar, and water with onions.
  • 3 marinate overnight or at least 4-6 hours.

  • 6 * variation: spread cracker with cream cheese first and then onion mixture.

French Onion Crostini

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 6 yellow onions, thinly sliced (about 2 pounds)
  • 2 sprigs fresh thyme
  • salt, to taste
  • pepper, to taste
  • 1/2 baguette, preferably semolina, cut crosswise into 24 slices
  • 2 cups swiss cheese, shredded (or jarlsberg cheese)

Recipe

  • 1 in large, heavy pot or skillet, warm 1/4 cup olive oil over medium-low heat.
  • 2 add the onions and 1 sprig thyme and cook, stirring every 10 minutes or so (if they start sticking to the pan, add a splash of water), for about 1 1/2 hours.
  • 3 season to taste with salt and pepper.
  • 4 meanwhile, preheat the oven to 350 degrees.
  • 5 arrange the baguette slices on a baking sheet and brush on both sides with the remaining 2 t olive oil.
  • 6 season with salt and pepper.
  • 7 bake until crisp, 10-15 minutes.
  • 8 place about 1 t cheese on each toast; bake until the cheese is melted, about 5 minutes.
  • 9 remove the leaves from the remaining thyme sprig and chop.
  • 10 top each toast with the carmelized onions and chopped thyme.

Napa's Sourdough Bread Dip

  • 1 round sourdough loaf (original recipe uses a french bread round)
  • 1 pint sour cream
  • 1/2 cup of chopped green onion
  • 1 cup of chopped ham
  • 1 (8 ounce) package cream cheese (softened)

  • sourdough loaf or cracker (optional)

Recipe

  • 1 pre-heat oven to 350.
  • 2 cut off the top of the sourdough round.
  • 3 hollow out the bread to form a bowl shape (save the left over bread).
  • 4 combine onions, cream cheese, sour cream, ham and cheese.
  • 5 mix until completely blended.
  • 6 fill the bread shell with the cream cheese mixture and replace the top of the bread.

Sloyki (mushroom Dumplings)

  • 3 cups all-purpose flour
  • 1 cup sour cream
  • 1/2 lb margarine
  • 2 tablespoons margarine
  • 1 lb fresh mushrooms, minced

  • 1 cup grated cheese
  • salt and pepper, to taste
  • 1 egg yolk
  • caraway seed

Recipe

  • 1 pour flour on cutting board. add margarine and sour cream. cut the mixture with a wide knife until it becomes thick dough. do not touch with hands.
  • 2 -refrigerate the dough overnight.
  • 3 -sauté mushrooms and onion in margarine until soft.
  • 4 cool, then place them into a bowl and add grated cheese, salt, and pepper. mix well.
  • 5 take the dough out of the refrigerator. roll it out to a thickness of about 1/8".
  • 6 cut the dough into 4" squares.
  • 7 fold each of the squares diagonally until there is a crease in the dough. unfold and lay flat.
  • 8 spoon 1 tbls. of filling on half of each square.
  • 9 fold the square diagonally along the crease, making sure the filling does not fall out.
  • 10 pinch the sides until there are no gaps in the dough.
  • 11 repeat until all of your dough and mixture has been used.
  • 12 put the triangles on a baking pan.
  • 13 beat the egg yolk in a bowl with a hand mixer.
  • 14 brush the top of the triangles with the beaten egg yolk.
  • 15 sprinkle the top of the triangles with caraway seeds.
  • 16 bake in 350 degree oven for 20 minutes, or until golden brown.

Margarita Chicken Wings

  • 3 lbs chicken wings (about 30 )
  • 3 tablespoons lemon pepper
  • 3 tablespoons vegetable oil
  • 1 cup honey
  • 3/4 cup prepared mustard (i like dijon )
  • 1/2 cup fresh lime juice
  • 1/4 cup gold tequila
  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoons hot sauce

Recipe

  • 1 preheat grill to medium.
  • 2 trim tips from wings and cut through the joint to separate.
  • 3 put winglets and drumettes into a large bowl and toss with lemon pepper and oil.
  • 4 to make the sauce, simply toss the ingredients together and whisk. set aside.
  • 5 place the wings into a lightly oiled grill basket and grill for 10 - 12 minutes per side, turning every 5 or 6 minutes, until golden brown and crisp.
  • 6 carefully remove from grill basket and toss in the sauce.
  • 7 remove from sauce and serve.

Pesto Mozzarella Skewers

  • 8 ounces mozzarella cheese, in balls
  • 16 cherry tomatoes
  • 1/2 cup pesto sauce (in jars, available in gourmet section)
  • 1 tablespoon olive oil

  • fresh basil leaf (optional)

Recipe

  • 1 mix pesto, olive oil, salt and pepper.
  • 2 place drained mozzarella balls in a ziplock bag and add pesto mixture.

Easiest Ever Cheese Dip

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 (12 ounce) package velveeta pepper jack cheese, american singles can be substituted if desired
  • 1/2 cup milk
  • 2 tablespoons sour cream
  • 1 teaspoon ground cumin

Recipe

  • 1 in a small pot, heat milk and sour cream over medium-low heat, stirring until sour cream is fully incorporated.
  • 2 begin adding cheese to pot, one slice at a time, until cheese is completely melted. ( i recommend tearing each slice into smaller pieces when adding to the pot).
  • 3 sprinkle ground cumin into pot and stir to combine.
  • 4 pour mixture into a bowl or small crock-pot, serve and enjoy!

Slow-roasted Tomatoes

Ingredients

  • 4 plum tomatoes, halved lengthwise
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves or 1/4 teaspoon dried thyme

  • 1 preheat oven to 325 degrees.
  • 2 place tomatoes on a rimmed baking sheet, cut side up.

Pesto From The Garden

  • 2 cups fresh basil (firmly packed)
  • 4 peppercorns (freshly ground)
  • 2 tablespoons pecans (toasted, occasionally i use the traditional pine nuts, toasted)
  • 3 garlic cloves (minced)

  • 1/2 cup olive oil
  • 1/2 cup parmesan cheese (grated)

Recipe

  • 1 put basil into mini processor, a cup at a time, pushing down as needed, until smooth.
  • 2 add pepper, pecans, garlic, and salt. process some more.
  • 3 add oil a little at a time and process until consistancy of whipped butter.
  • 4 add the cheese and process again.
  • 5 pack into sterile jars and top with thin layer of olive oil.
  • 6 refrigerate, then enjoy!

Pesto

Ingredients

  • 2 cups packed home grown basil (or fresh as you can)
  • 1/2 cup toasted pine nuts, cooled
  • 1 cup grated parmesan cheese (either or both) or 1 cup romano cheese (either or both)
  • 3 cloves crushed garlic
  • 1/4-1/2 cup olive oil, depending on how creamy you want it

Recipe

  • 1 put into a food processor first 4 ingredients. pulse to blend.
  • 2 slowly add oil through feed tube to make a nice paste.

Natali's Sausage Balls

  • 1 lb sausage (jimmy dean can use hot or mild)
