Ingredients

- 2 cups pumpkin puree
- 1 cup orange marmalade
- 1 teaspoon fresh ginger, grated
- 2 tablespoons lemon juice
Recipe
- 1 in a medium sauce pan bring pumpkin, marmalade, and ginger to a boil.
- 2 reduce heat to medium-low and simmer uncovered for 5 minutes.
- 3 remove from heat and stir in lemon juice.
- 4 transfer to a bowl, cover and cool about 1 hour.
- 5 makes 3 cups of spread and will keep in the fridge for up to a week.
