Pumpkin Marmalade

Ingredients

  • Servings: 24
  • 2 cups pumpkin puree
  • 1 cup orange marmalade
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons lemon juice

Recipe

  • 1 in a medium sauce pan bring pumpkin, marmalade, and ginger to a boil.
  • 2 reduce heat to medium-low and simmer uncovered for 5 minutes.
  • 3 remove from heat and stir in lemon juice.
  • 4 transfer to a bowl, cover and cool about 1 hour.
  • 5 makes 3 cups of spread and will keep in the fridge for up to a week.
