Cucumber-red Pepper Raita

Total Time: 6 mins Preparation Time: 5 mins Cook Time: 1 min

Ingredients

  • Servings: 6
  • 1 large cucumber, seeded and diced (about 1 1/2 cups)
  • 1/2 cup diced red bell pepper
  • 1/2 cup plain yogurt
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon distilled vinegar
  • 1/4 teaspoon ground cumin
  • 1 clove garlic, crushed
  • 1/8 teaspoon salt

Recipe

  • 1 mix all ingredients in a medium sized bowl.
  • 2 cover and chill until ready to serve.
