Low-fat Fried Chicken Strips

Total Time: 51 mins Preparation Time: 45 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 1/4 cup flour
  • 1/4 cup dry breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 lb chicken tenders
  • 1/2 cup low-fat buttermilk
  • olive oil (the actual recipe calls for 1 t. but i think you need some more to get it the crisp "fried")

Recipe

  • 1 combine the first 6 ingredients in a shallow dish, and set aside.
  • 2 combine the chicken and the buttermilk in a plastic zip-top bag; seal and marinate in refrigerator 30 minutes.
  • 3 remove the chicken and discard the marinade.
  • 4 pour olive oil in skillet to just barely covering the entire bottom of the pan.
  • 5 heat oil over medium heat.
  • 6 dredge a few chicken strips at a time in breadcrumb mixture, tossing to coat.
  • 7 add chicken to the pan, and cook 3 minutes on each side or until done.
