Mini Olive Cakes

Ingredients

• Servings: 4
• 4 wedges laughing cow cheese, diced
• 1 1/4 cups flour
• 1 1/2 teaspoons baking powder
• 3 eggs
• 1/3 cup olive oil
• 1/2 cup milk
• chopped green olives
• 1 pinch salt

Recipe

• 1 preheat oven to 350 degrees.
• 2 mix together flour and baking powder in a large bowl.
• 3 add eggs, oil, milk, salt and blend well.
• 4 grease muffin tins.
• 5 fill tins 3/4 full with mixture.
• 6 top with olives and cheese.
• 7 bake for 20 minutes.
