Lemon Sugar Almonds

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 egg
  • 1 lemon, juice of
  • 3/4 cup sifted powdered sugar
  • 1 1/2 teaspoons grated lemon rind
  • 1 dash ground nutmeg
  • 1 1/2 cups whole blanched almonds, toasted

Recipe

  • 1 in a large bowl, beat the egg and lemon juice, combine with almonds, and set aside.
  • 2 combine the remaining ingredients (sugar, lemon rind, & nutmeg) in a small bowl, and mix into almond mixture.
  • 3 spread onto a greased baking sheet and bake at 300 degrees for 20 minutes or until coating is dry and almonds are crisp; stir almonds occasionally.
  • 4 once cooled, store in airtight tins or in a zip-loc bag in your lunch bag :-).
