Mini Frittata Appetizers

Ingredients
- 0.5 (10 ounce) package frozen chopped spinach
- 1 cup ricotta cheese
- 3/4 cup grated parmesan cheese
- 2/3 cup chopped mushroom
- 2 tablespoons finely chopped onions
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 24 slices pepperoni
Recipe
- 1 thaw spinach and squeeze dry.
- 2 mix with ricotta, parmesan, mushrooms, onion, oregano, salt, and egg.
- 3 lightly grease or spray 24 mini (1") muffin cups.
- 4 place a slice of pepperoni in the bottom of each.
- 5 spoon cheese mixture into cups.
- 6 bake at 375° about 25 minutes, or until light golden on top.
- 7 cool 10 minutes, then gently loosen and remove from pans.
- 8 if you wish, garnish with small dabs of sour cream, and additional finely chopped pepperoni.
