Mini Frittata Appetizers

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 0.5 (10 ounce) package frozen chopped spinach
  • 1 cup ricotta cheese
  • 3/4 cup grated parmesan cheese
  • 2/3 cup chopped mushroom
  • 2 tablespoons finely chopped onions
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 24 slices pepperoni

Recipe

  • 1 thaw spinach and squeeze dry.
  • 2 mix with ricotta, parmesan, mushrooms, onion, oregano, salt, and egg.
  • 3 lightly grease or spray 24 mini (1") muffin cups.
  • 4 place a slice of pepperoni in the bottom of each.
  • 5 spoon cheese mixture into cups.
  • 6 bake at 375° about 25 minutes, or until light golden on top.
  • 7 cool 10 minutes, then gently loosen and remove from pans.
  • 8 if you wish, garnish with small dabs of sour cream, and additional finely chopped pepperoni.
