Smoked Red Peppers And Feta Dip

Ingredients
- 1 small red onion, sliced
- 1 tablespoon olive oil
- 3 large red peppers (or 400g jar of smoked peppers)
- 200 g soft feta cheese
- 2 tablespoons balsamic vinegar
- 1 teaspoon fresh thyme, leafs
Recipe
- 1 place the whole peppers directly over a gas burner. when charred through, place in a plastic bag so that it would steam and the charred bits will wipe off.
- 2 saute the onion in the olive oil until very soft and light golden in colour.
- 3 rub the skins off the peppers, discard seeds and chop. place in a blender and blend all the ingredients until smooth.
- 4 serve with toasted crusty bread or toasted pita bread slices.
