Smoked Red Peppers And Feta Dip

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 3 large red peppers (or 400g jar of smoked peppers)
  • 200 g soft feta cheese
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh thyme, leafs

Recipe

  • 1 place the whole peppers directly over a gas burner. when charred through, place in a plastic bag so that it would steam and the charred bits will wipe off.
  • 2 saute the onion in the olive oil until very soft and light golden in colour.
  • 3 rub the skins off the peppers, discard seeds and chop. place in a blender and blend all the ingredients until smooth.
  • 4 serve with toasted crusty bread or toasted pita bread slices.
