Marinated Olives And Fennel

Ingredients

  • Servings: 6
  • 1 cup kalamata olive
  • 1 cup oil-cured black olive
  • 1 cup green olives, large
  • 1 cup fennel bulb, trimmed and thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 tablespoon lemon zest, grated
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil

Recipe

  • 1 roughly chop olives and remove any pits.
  • 2 mix all ingredients in a large bowl. serve at room temperature.
  • 3 notes: this can be made ahead and refrigerated, but bring to room temperature before serving.
