Ingredients

- 2 lbs button mushrooms
- 1/2 cup lemon juice
- 1/2 cup wine (or dry vermouth)
- 1/2 cup olive oil
- 1 teaspoon oregano
- 1/2 small onion, grated
- 1 tablespoon salt and black pepper
Recipe
- 1 simmer all ingredients with lid on for 10 minute.
- 2 chill.
- 3 sprinkle with chopped parsley before serving.
- 4 will keep for a week to ten days.
- 5 freezes well.
