Marinated Artichoke Hearts

Ingredients

  • Servings: 4
  • 3 (16 ounce) cans artichoke hearts, drained
  • 1 ounce good seasons italian dressing
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 water

Recipe

  • 1 drain the artichokes and put them into a glass jar or bowl.
  • 2 mix the good seasons seasoning with the water and vinegar, then stir in the olive oil. you may want to add more vinegar.
  • 3 pour over artichokes and store in refrigerator. turn jar occasionally to make sure all the artichokes get some marinating time.
  • 4 options: sometimes i add lemon zest to an extra tang. oh, and i sometimes throw in pepperoncinis and several different kinds of olives to the mix.
