Smoked Chicken Fillet And Avocado Vinaigrette

Ingredients

  • Servings: 2
  • 1 smoked chicken fillet
  • 1 ripe firm avocado
  • 1 handful wasabi peas or 1 handful hazelnuts
  • 1 tablespoon wine vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 teaspoon fresh ground pepper
  • 1/2 teaspoon dijon mustard

Recipe

  • 1 combine the vinegar, olive oil, lemon juice, salt, pepper, and mustard in a closed container and shake vigorously.
  • 2 slice the chicken fillet.
  • 3 slice the avocado.
  • 4 arrange in alternating slices on a plate.
  • 5 scatter hazelnuts or wasabi peas over the top.
  • 6 drizzle dressing over it.
