Peruvian Tequeños

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • 1 teaspoon salt
  • 4 cups flour
  • 1 tablespoon butter
  • 2 egg yolks
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika
  • water
  • shortening
  • 1 lb farmer cheese (ricotta or feta)
  • 1 egg

Recipe

  • 1 preparation:
  • 2 mix flour, butter, egg yolks, salt, sugar and paprika with enough water to make a soft homogeneous dough. set aside for a few minutes.
  • 3 cut cheese in strips (½ x 2 inches).
  • 4 divide dough in 3 parts, rolling each part very thinly. then cut 1-inch strips, brush borders with egg and roll, covering cheese strips completely. egg helps in sealing borders.
  • 5 fry in hot shortening until golden.
  • 6 serve hot. usually served with avocado dressing or guacamole.
  • 7 variation: tequeños can be also prepared with won ton wraps, instead preparing dough.
