Peruvian Tequeños

Ingredients
- 1 teaspoon salt
- 4 cups flour
- 1 tablespoon butter
- 2 egg yolks
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon paprika
- water
- shortening
- 1 lb farmer cheese (ricotta or feta)
- 1 egg
Recipe
- 1 preparation:
- 2 mix flour, butter, egg yolks, salt, sugar and paprika with enough water to make a soft homogeneous dough. set aside for a few minutes.
- 3 cut cheese in strips (½ x 2 inches).
- 4 divide dough in 3 parts, rolling each part very thinly. then cut 1-inch strips, brush borders with egg and roll, covering cheese strips completely. egg helps in sealing borders.
- 5 fry in hot shortening until golden.
- 6 serve hot. usually served with avocado dressing or guacamole.
- 7 variation: tequeños can be also prepared with won ton wraps, instead preparing dough.
