Marinated Mushrooms

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs fresh mushrooms
  • 1 1/2 cups vinegar or 1 1/2 cups wine vinegar
  • 1 cup italian dressing
  • 1 teaspoon oregano (any spice can be substituted, i'd like to try dill next time)

Recipe

  • 1 in a non-aluminum saucepan, combine vinegar with 1 1/2 cups water and heat to boiling.
  • 2 add cleaned mushrooms (clean with damp cloth, not water so they don't absorb the water);.
  • 3 boil 2 minutes.
  • 4 drain and reserve 1/2 cup reserved cooking liquid.
  • 5 cool mushrooms for 1 hour.
  • 6 mix the 1/2 cup reserved liquid with the italian dressing and seasoning; pour over cooled mushrooms.
  • 7 add salt and pepper to taste.
  • 8 i prefer them warm but they are also delicious cooled.
