Pan Fried Eggplant

Ingredients

- 1/3 cup cornmeal
- 1/3 cup flour
- 3/4 teaspoon salt
- 1 teaspoon pepper
- 1/4 cup parmesan cheese, grated
- 1 egg
- 2 tablespoons water
- 2 lbs eggplants
- butter, enough for pan frying
Recipe
- 1 sift together cornmeal, flour, salt and pepper.
- 2 stir in cheese.
- 3 beat egg and water.
- 4 cut eggplant into 1/2 inch slices.
- 5 roll in breading.
- 6 dip into egg mixture.
- 7 roll again in breading.
- 8 pan fry in butter over medium heat about 5 minutes per side.
- 9 turn only once.
