Pan Fried Eggplant

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • Servings: 6
  • 1/3 cup cornmeal
  • 1/3 cup flour
  • 3/4 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup parmesan cheese, grated
  • 1 egg
  • 2 tablespoons water
  • 2 lbs eggplants
  • butter, enough for pan frying

Recipe

  • 1 sift together cornmeal, flour, salt and pepper.
  • 2 stir in cheese.
  • 3 beat egg and water.
  • 4 cut eggplant into 1/2 inch slices.
  • 5 roll in breading.
  • 6 dip into egg mixture.
  • 7 roll again in breading.
  • 8 pan fry in butter over medium heat about 5 minutes per side.
  • 9 turn only once.
