Onions (oignons) Monegasque

Ingredients
- Servings: 6
- 500 g pickling onions, peeled
- 2 teaspoons icing sugar
- 2 tablespoons olive oil
- 1 1/2 tablespoons tomato paste
- 1 1/2 tablespoons vinegar
- 1 1/2 tablespoons sultanas
- 250 ml water
- bouquet garni
- 1 teaspoon salt
- fresh ground pepper
Recipe
- 1 combine all ingredients in a medium saucepan.
- 2 bring to the boil and simmer covered until the onions are softened but still in shape.
- 3 cool & refrigerate.
