Onions (oignons) Monegasque

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 500 g pickling onions, peeled
  • 2 teaspoons icing sugar
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons tomato paste
  • 1 1/2 tablespoons vinegar
  • 1 1/2 tablespoons sultanas
  • 250 ml water
  • bouquet garni
  • 1 teaspoon salt
  • fresh ground pepper

Recipe

  • 1 combine all ingredients in a medium saucepan.
  • 2 bring to the boil and simmer covered until the onions are softened but still in shape.
  • 3 cool & refrigerate.
