Salsa- For Canning

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 8 firm ripe tomatoes, chopped (romas)
  • 2 (4 ounce) cans chopped green chilies
  • 1 (4 ounce) can jalapenos
  • 2 cups chopped onions
  • 1 cup chopped green pepper
  • 1/4 cup lemon juice
  • 6 tablespoons vinegar
  • 2 teaspoons dry oregano leaves
  • 1 tablespoon salt

Recipe

  • 1 chop onion and green pepper coarsely.
  • 2 mix all ingredients together.
  • 3 bring to a boil and boil for 5 minutes.
  • 4 put in 1/2 pt. jars, leaving 1/4" headspace.
  • 5 process for 50 minute.
  • 6 makes 8 pints.
  • 7 *time does not include processing time.
