Scallion Crepes

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • Servings: 4
  • 1/4 teaspoon gingerroot, grated
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 teaspoons vegetable oil
  • 1 egg
  • 1/2 cup flour
  • 1/2 cup milk
  • 1/2 cup seltzer water
  • 1/4 cup chives, chopped
  • 1/4 cup unsalted butter, melted

Recipe

  • 1 mix all ingredients, through seltzer, in blender and blend until smooth.
  • 2 make crepes, to whatever size you want: brush crepe pan with melted butter (or spray with pam), pour batter and tilt pan to cover. cook 30 seconds, flip and cook 30 seconds more. place crepe on wire rack and continue making remaining crepes.
  • 3 use immediately, or stack when cool and wrap in plastic until ready to serve.
