Savoury Cantaloupe Salad

Ingredients

  • Servings: 6
  • 1 -3 lb cantaloupe, cut into cubes
  • 1 pinch salt
  • 1 pinch pepper
  • 2 teaspoons olive oil
  • 2 teaspoons wine vinegar
  • 2 slices soppressata (salami, cut into thin strips)
  • 1 tablespoon chives
  • 1/2 lb goat cheese
  • 6 slices country bread

Recipe

  • 1 season melon cubes.
  • 2 add vinegar.
  • 3 garnish with salami and chives.
  • 4 spread cheese on bread and serve alongside.
