Pineapple Cheese Ball

Ingredients

- 2 (8 ounce) packages cream cheese, softened
- 1 cup minced celery
- 1/2 cup chopped green bell pepper
- 1 teaspoon minced onion
- 1 (20 ounce) can crushed pineapple, drained
- 1 cup chopped pecans (optional)
Recipe
- 1 1. be sure to drain the pineapple really well, otherwise it may turn out more like a dip rather than a cheese ball.
- 2 2. combine cream cheese, celery, bell pepper, onion, and crushed pineapple.
- 3 3. divide the mixture in half and shape into two balls.
- 4 4. if desired, roll each ball in pecans.
- 5 5. chill several hours or overnight.
- 6 6. serve with crackers.
