Pineapple Bulgar Wheat Salad

Ingredients

  • 1/3 medium avocado
  • 1/3 cup fresh pineapple chunk
  • 3/4 cup bulgar wheat, cooked and (chilled)
  • 1/4 cup red bell pepper, chopped
  • 2 tablespoons celery, chopped
  • 1 scallion, thinly sliced
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice

Recipe

  • 1 peel and cube avocado and stir in pineapple. pineapple will prevent avocado discoloring. combine ingredients and toss.
