Ingredients
- 1/3 medium avocado
- 1/3 cup fresh pineapple chunk
- 3/4 cup bulgar wheat, cooked and (chilled)
- 1/4 cup red bell pepper, chopped
- 2 tablespoons celery, chopped
- 1 scallion, thinly sliced
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
Recipe
- 1 peel and cube avocado and stir in pineapple. pineapple will prevent avocado discoloring. combine ingredients and toss.
