Feta Pine Nut Dip

Ingredients

  • Servings: 8
  • 1/2 cup pine nuts
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons dried basil
  • 1/4 teaspoon dried mint
  • 6 ounces feta cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 cup plain yogurt

Recipe

  • 1 preheat oven to 350°f
  • 2 toast pine nuts in a shallow baking pan, stirring occasionally until golden brown, about 7 minutes.
  • 3 cool and chop finely.
  • 4 combine nuts, red pepper, parsley, basil, and mint in a medium bowl.
  • 5 crumble feta in small pieces; add to nuts.
  • 6 whisk garlic, salt, pepper, and yogurt in a small bowl until well blended.
  • 7 stir into the nut and feta mixture.
  • 8 cover and chill for one hour.
  • 9 serve with crackers.
