Feta Pine Nut Dip

Ingredients

- 1/2 cup pine nuts
- 1/2 cup finely chopped red bell pepper
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons dried basil
- 1/4 teaspoon dried mint
- 6 ounces feta cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 cup plain yogurt
Recipe
- 1 preheat oven to 350°f
- 2 toast pine nuts in a shallow baking pan, stirring occasionally until golden brown, about 7 minutes.
- 3 cool and chop finely.
- 4 combine nuts, red pepper, parsley, basil, and mint in a medium bowl.
- 5 crumble feta in small pieces; add to nuts.
- 6 whisk garlic, salt, pepper, and yogurt in a small bowl until well blended.
- 7 stir into the nut and feta mixture.
- 8 cover and chill for one hour.
- 9 serve with crackers.
