Sardinian Hard-boiled Eggs (uova Alla Sarda)

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 6 hard-boiled eggs
  • 1/3 cup olive oil
  • 4 teaspoons wine vinegar
  • 1 garlic clove, finely chopped
  • 2 -3 sprigs parsley, finely chopped
  • 2 1/2 tablespoons soft breadcrumbs
  • salt

Recipe

  • 1 slice cooled eggs in half lengthwise.
  • 2 put oil, vinegar and salt, to taste in frying pan. heat pan on low heat.
  • 3 add eggs, turning eggs frequently,cooking over low heat until vinegar evaporates.
  • 4 remove eggs and put in a oven proof dish,cut side up and put in low oven to keep warm.
