Queso Con Chorizo Y Poblanos

Ingredients
- 3 lbs monterey jack cheese, shredded
- 1 lb mild cheddar cheese, shredded
- 5 tablespoons cornstarch
- 1 lb chorizo sausage
- 4 poblano peppers, roasted
- 2 bunches green onions
- 1 head roasted garlic
- 1 (14 ounce) can vegetable broth
- 1 (12 ounce) can 2% evaporated milk
Recipe
- 1 brown the chorizo and drain thoroughly.
- 2 roast, peel and dice the poblano chiles.
- 3 lightly sautee the green onions to wilt.
- 4 combine the broth and milk in a large microwave safe bowl and heat in the microwave until very hot.
- 5 in a separate bowl, toss together the corn starch and cheese (i cheated and bought the pre-shredded cheese then just put the corn starch in the bag and shook it together).
- 6 gradually begin to add the cheese, a cup or so at a time. stir to combine after each addition.
- 7 after all of the cheese is combined, add the chorizo, poblanos, green onions and garlic.
- 8 stir to combine.
- 9 put in the crock pot on warm setting and stir as needed.
