Queso Con Chorizo Y Poblanos

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 3 lbs monterey jack cheese, shredded
  • 1 lb mild cheddar cheese, shredded
  • 5 tablespoons cornstarch
  • 1 lb chorizo sausage
  • 4 poblano peppers, roasted
  • 2 bunches green onions
  • 1 head roasted garlic
  • 1 (14 ounce) can vegetable broth
  • 1 (12 ounce) can 2% evaporated milk

Recipe

  • 1 brown the chorizo and drain thoroughly.
  • 2 roast, peel and dice the poblano chiles.
  • 3 lightly sautee the green onions to wilt.
  • 4 combine the broth and milk in a large microwave safe bowl and heat in the microwave until very hot.
  • 5 in a separate bowl, toss together the corn starch and cheese (i cheated and bought the pre-shredded cheese then just put the corn starch in the bag and shook it together).
  • 6 gradually begin to add the cheese, a cup or so at a time. stir to combine after each addition.
  • 7 after all of the cheese is combined, add the chorizo, poblanos, green onions and garlic.
  • 8 stir to combine.
  • 9 put in the crock pot on warm setting and stir as needed.
