Simple Sweet Potatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large sweet potato
  • 1/2 cup fresh parsley
  • cayenne pepper (to taste)
  • 3 tablespoons duck fat

Recipe

  • 1 preheat the oven to 220°c.
  • 2 simply cut the potato into chips or cubes (cubes make a great garnish).
  • 3 in a skillet heat the duck fat until near smoking point.
  • 4 caramelise your sweet potato in the duck fat.
  • 5 it sill start to go a light colour and then slight brown (but not blackened!) place the skillet in the oven and roast until potatoes are cooked (they'll be blackened around the edges- fully caramelised), about 20-30 minutes depends on how big you cut them.
  • 6 remove from oven and drain excess fat on paper towel.
  • 7 coat with chopped parsley and cayenne pepper (as much or as little as you like).
  • 8 serve as garnish or just eat them now!
