Orange-glazed Carrots

Ingredients

- 1 1/2 lbs carrots
- 1 cup fresh orange juice
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 tablespoons cilantro leaves, finely chopped
Recipe
- 1 peel carrots and cut into 2-inch lengths, then halve them lengthwise.
- 2 place carrots in a large skillet with orange juice, salt and pepper.
- 3 bring to a boil, reduce to simmer, cover and cook 6 to 8 minutes, tossing ooccasionally.
- 4 uncover and cook until liquid is reduced to glaze, tossing occasionally. this should take 2 to 3 minutes.
- 5 mix in cilantro, serve immediately.
