Orange-glazed Carrots

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs carrots
  • 1 cup fresh orange juice
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons cilantro leaves, finely chopped

Recipe

  • 1 peel carrots and cut into 2-inch lengths, then halve them lengthwise.
  • 2 place carrots in a large skillet with orange juice, salt and pepper.
  • 3 bring to a boil, reduce to simmer, cover and cook 6 to 8 minutes, tossing ooccasionally.
  • 4 uncover and cook until liquid is reduced to glaze, tossing occasionally. this should take 2 to 3 minutes.
  • 5 mix in cilantro, serve immediately.
