Pinto Bean Dip

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 1 lb dry pinto beans
  • 4 garlic cloves, whole
  • 3 bay leaves
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • crushed red pepper flakes (optional)

Recipe

  • 1 rinse and strain beans.
  • 2 place in pot, cover with water and soak overnight.
  • 3 drain and add clean cold water to cover beans.
  • 4 add garlic, bay leaf, olive oil, salt& pepper (i usually use approximately 1- 2 teaspoons of salt and 1/4 teaspoon pepper).
  • 5 bring to a boil.
  • 6 cover and reduce to a simmer.
  • 7 let cook 3 hours or so, until beans are soft, making sure there is always enough liquid in pot.
  • 8 remove bay leaf.
  • 9 mash everything in pot, (including garlic), adding a bit more olive oil if needed.
  • 10 serve warm with crusty bread and enjoy.
