Olive-caper Spread

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup pitted black kalamata olive
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon drained capers
  • 2 cloves garlic, minced
  • 1 (8 ounce) french baguettes, in 1/2 inch slices
  • 1/16-1/8 cup cup unsalted butter, melted

Recipe

  • 1 puree olives with oil, basil, capers and garlic in processor.
  • 2 transfer to bowl.
  • 3 can be prepared 4 days ahead; refrigerate.
  • 4 let stand one hour at room temp before serving.
  • 5 croutons: preheat oven to 400 degrees.
  • 6 arrange bread slices on baking sheet.
  • 7 brush both sides with butter.
  • 8 bake until crisp and golden brown, about 10 minutes.
  • 9 cool slightly.
  • 10 can be prepared 1 day ahead.
  • 11 cool completely; store in plastic bag at room temperature.
