Grilled Pizza

Ingredients
- 1 (1/4 ounce) package active dry yeast
- 1 1/2 cups lukewarm water
- 3 1/2-4 cups flour
- 2 teaspoons salt
- 1 tablespoon olive oil
Recipe
- 1 dissolve the yeast in the water.
- 2 combine 3 1/2 cups flour with the salt on a work surface. make a well and add the yeast mixture and olive oil.
- 3 knead the dough 5 to 8 minutes until smooth and no longer sticky, adding additional 1/2 cup flour as needed.
- 4 place the dough in a large oiled bowl. cover with a towel and put in a warm place for 2 to 3 hours or until the dough has doubled.
- 5 remove dough from the bowl, punch down and divide into 8 even balls. flatten each ball on a lightly floured surface and roll or stretch into a thin 8" round. place the rounds on a lightly floured tray. cover with a towel and let the dough rest 20 minutes.
- 6 brush olive oil on both sides of pizza and grill dough directly on the grill for approximately 1 minute. turn and grill for another minute, then remove to a cutting board. repeat with remaining dough.
- 7 top as desired and serve.
