Seville Orange Marmalade

Ingredients
- 12 seville oranges
- 3 lemons
- 8 lbs sugar
- 5 1/2 pints water
Recipe
- 1 method : remove pips and juice, cut out skin and pith as much as
- 2 possible put peel through mincer and soak in water and juice for 12
- 3 hours. boil for 2 hours, then add sugar and boil for another 2 hours.
- 4 soak pips and skins in water, bring to boil and strain, add to peel
- 5 and juice before sugar is added.
- 6 note : i use a liquidiser to cut the fruit, a blender tends to 'hold' the peel in large bits.
