Seville Orange Marmalade

Total Time: 5 hrs Preparation Time: 1 hr Cook Time: 4 hrs

Ingredients

  • 12 seville oranges
  • 3 lemons
  • 8 lbs sugar
  • 5 1/2 pints water

Recipe

  • 1 method : remove pips and juice, cut out skin and pith as much as
  • 2 possible put peel through mincer and soak in water and juice for 12
  • 3 hours. boil for 2 hours, then add sugar and boil for another 2 hours.
  • 4 soak pips and skins in water, bring to boil and strain, add to peel
  • 5 and juice before sugar is added.
  • 6 note : i use a liquidiser to cut the fruit, a blender tends to 'hold' the peel in large bits.
