- 2 teaspoons butter
- 1 tablespoon onion, minced
- 1/2 cup cheddar cheese, grated
- 1/4 cup tomato, diced
- 2 eggs
Recipe
- 1 melt the butter in a heavy skillet.
- 2 add the onion and cook until just soft.
- 3 add the tomatoes and cheese.
- 4 cook until the cheese has melted.
- 5 lightly beat the eggs.
- 6 add to the pan and cook until just set.
- 7 serve immediately.
