Old-time Pear Preserves

Total Time: 6 hrs 25 mins Preparation Time: 25 mins Cook Time: 6 hrs

Ingredients

  • 6 lbs pears
  • 10 cups sugar
  • 4 tablespoons lemon juice

Recipe

  • 1 peel and dice pears.
  • 2 put in large pot and cover with sugar.
  • 3 let set overnight.
  • 4 the next day, add lemon juice and bring to a rapid boil.
  • 5 turn heat to low and let slow cook 5 to 6 hours, till it turns light brown.
  • 6 bring back to a boil and quickly ladle into jars and seal.
  • 7 for a no-fail seal, invert jars for 5 minutes.
