Fritelle Di Lenticchie Or Lentil Fritters

Total Time: 18 mins Preparation Time: 12 mins Cook Time: 6 mins

Ingredients

  • 1/4 cup butter
  • 1/2 cup flour
  • 1 cup milk, warm
  • 1 1/3 cups lentils, boiled and drained (about 1/2 cup dry=1.3 cups cooked)
  • 1 pinch salt
  • olive oil (other ok)
  • sea salt, for dusting

Recipe

  • 1 melt butter in saucepan.
  • 2 stir in flour and cook over low to medium heat stirring until roux turns tan.
  • 3 add milk in a thin stream, stirring briskly to keep lumps from forming.
  • 4 when this bechamel sauce is very thick, season with salt and remove from heat to cool.
  • 5 add lentils and mix well.
  • 6 traditionally, fry by tablespoon in 1" or deeper hot (350f) oil until golden or about 1-2 minutes, turning once. i prefer light oil in non stick or cast iron fry pan.
  • 7 drain on absorbent paper and dust with sea salt.
  • 8 serve at once.
  • 9 serves 4 as meal or make as appetizer.
