Fritelle Di Lenticchie Or Lentil Fritters

Ingredients
- 1/4 cup butter
- 1/2 cup flour
- 1 cup milk, warm
- 1 1/3 cups lentils, boiled and drained (about 1/2 cup dry=1.3 cups cooked)
- 1 pinch salt
- olive oil (other ok)
- sea salt, for dusting
Recipe
- 1 melt butter in saucepan.
- 2 stir in flour and cook over low to medium heat stirring until roux turns tan.
- 3 add milk in a thin stream, stirring briskly to keep lumps from forming.
- 4 when this bechamel sauce is very thick, season with salt and remove from heat to cool.
- 5 add lentils and mix well.
- 6 traditionally, fry by tablespoon in 1" or deeper hot (350f) oil until golden or about 1-2 minutes, turning once. i prefer light oil in non stick or cast iron fry pan.
- 7 drain on absorbent paper and dust with sea salt.
- 8 serve at once.
- 9 serves 4 as meal or make as appetizer.
