Eggplant (aubergine) Appetizer

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 large eggplants
  • 1 tablespoon salt
  • 2 tablespoons olive oil
  • 2 teaspoons oregano
  • 15 ounces marinara sauce
  • 1 cup sharp cheddar cheese, grated

Recipe

  • 1 preheat the oven to 325.
  • 2 slice the eggplant and sprinkle with the salt. let sit for 20 minutes, and then rinse and pat dry.
  • 3 sprinkle over the olive oil and the oregano. place the slices on a cookie sheet and bake for 15 to 20 minutes.
  • 4 remove from the oven and spread the marinara sauce over each slice and sprinkle each with a good amount of cheese. bake until the cheese melts and serve at once.
