Smokey Bacon & Tomato Bean Dip

Ingredients

  • 3 slices naturally smoked bacon, chopped
  • 1 garlic clove, minced
  • 1/2 cup onion, chopped
  • 1/3 cup sun-dried tomato, blanched nd thinly sliced
  • 1 (540 ml) can six bean blend, drained and rinsed
  • 1 cup sour cream, fat-free
  • 2 tablespoons fresh parsley leaves
  • 1/8 teaspoon ground cumin
  • 1 cup seeded and diced tomato

Recipe

  • 1 in a skillet, cook bacon, garlic, onion and sundried tomatoes, until bacon is crisp; cool to room temperature.
  • 2 in a food processor, combine bacon mixture, beans, sour cream, parsley and cumin. process until smooth. stir in tomatoes. spoon dip into a wide dish.
