Smokey Bacon & Tomato Bean Dip

Ingredients
- 3 slices naturally smoked bacon, chopped
- 1 garlic clove, minced
- 1/2 cup onion, chopped
- 1/3 cup sun-dried tomato, blanched nd thinly sliced
- 1 (540 ml) can six bean blend, drained and rinsed
- 1 cup sour cream, fat-free
- 2 tablespoons fresh parsley leaves
- 1/8 teaspoon ground cumin
- 1 cup seeded and diced tomato
Recipe
- 1 in a skillet, cook bacon, garlic, onion and sundried tomatoes, until bacon is crisp; cool to room temperature.
- 2 in a food processor, combine bacon mixture, beans, sour cream, parsley and cumin. process until smooth. stir in tomatoes. spoon dip into a wide dish.
