Pickled Green Beans

Ingredients

- 1 lb green beans
- 1 cup cider vinegar
- 2 tablespoons sugar
- 2 teaspoons mixed pickling spices
- 1/2 teaspoon salt
- 1 garlic clove, chopped
- 1/2 cup chopped fresh dill
Recipe
- 1 trim beans. heat 1 quart of water to boiling, add beans and cook 5 minutes until just tender, but still bright green.
- 2 drain, reserving 1/2 cup of cooking liquid.
- 3 in a small saucepan, combine vinegar, sugar, spices, salt, garlic and dill. add reserved liquid. stir well.
- 4 cook over medium heat for 5 minutes.
- 5 place beans in a 2 quart jar or bowl. pour vinegar mixture over beans, cover, and refrigerate for 24 hours or longer.
