Mexican Pizzas

Ingredients
- 10 low-fat tortillas
- 1 (16 ounce) can fat-free refried beans
- 1 -1 1/2 lb ground turkey
- 0.5 (1 1/4 ounce) packet taco seasoning
- 1 -2 cup chunky salsa
- 1/4 cup sliced bell pepper
- 1/4 cup chopped onion
- 1/4 cup sliced mushrooms
- 2 1/2 cups cheddar cheese
Recipe
- 1 preheat oven to 350.
- 2 brown turkey and drain; mix in taco seasoning.
- 3 spread 5 tacos evenly and thinly with 1/5 can of the refried beans each. do not spread to edge by 1/4".
- 4 divide meat into five, spread evenly on top of refried beans.
- 5 top each with one of the remaining five tortillas.
- 6 spread 1/4 cup of salsa on top of each tortilla using a slotted spoon to drain excess moisture (you may use more to your liking).
- 7 sprinkle 1/2 cup cheddar cheese over each pizza.
- 8 lightly steam peppers, onions, and mushrooms until just a little tender (i do this in the microwave); drain.
- 9 distribute pepper mixture evenly over the pizzas.
- 10 bake 10-15 minutes or until cheese is melted and edges have slightly curled.
