Grilled Eggplant (aubergine) & Garlic Spread

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 large eggplant
  • 5 -6 garlic cloves, cut into slivers
  • olive oil
  • salt and pepper

Recipe

  • 1 with sharp paring knife, cut slits into eggplant.
  • 2 insert garlic slivers into each slit, using as few or many as you like.
  • 3 rub olive oil all over eggplant.
  • 4 put on hot grill, turning to cook evenly.
  • 5 eventually, the eggplant will sort of "deflate".
  • 6 remove from grill; set aside to cool a bit.
  • 7 when cool enough to handle, cut a long slit in eggplant, open it up, and scrape out eggplant/garlic "innards".
  • 8 place in bowl, salt & pepper to taste.
  • 9 drizzle with a little olive oil.
  • 10 serve with pita chips or crackers.
  • 11 or use as a vegetable side dish.
