Grilled Eggplant (aubergine) & Garlic Spread

Ingredients
- Servings: 6
- 1 large eggplant
- 5 -6 garlic cloves, cut into slivers
- olive oil
- salt and pepper
Recipe
- 1 with sharp paring knife, cut slits into eggplant.
- 2 insert garlic slivers into each slit, using as few or many as you like.
- 3 rub olive oil all over eggplant.
- 4 put on hot grill, turning to cook evenly.
- 5 eventually, the eggplant will sort of "deflate".
- 6 remove from grill; set aside to cool a bit.
- 7 when cool enough to handle, cut a long slit in eggplant, open it up, and scrape out eggplant/garlic "innards".
- 8 place in bowl, salt & pepper to taste.
- 9 drizzle with a little olive oil.
- 10 serve with pita chips or crackers.
- 11 or use as a vegetable side dish.
