Queso Blanco Con Chipotle

Ingredients

- 1 1/2 lbs american cheese
- 1/2 lb velveeta cheese
- 12 ounces chopped green chilies (canned, do not drain them)
- 1/4 cup chopped cilantro
- 3 green onions, thinly sliced
- 2 -4 canned chipotle chiles in adobo
- 1 tablespoon adobo sauce
- 1 cup mexican crema
- 1/2 cup half-and-half
Recipe
- 1 mince the chipotles and place in pot.
- 2 place all the remaining ingredients in a pot over medium heat, stirring to make sure it doesn't burn.
- 3 cook it until it is melted and ingredients are well blended.
- 4 serve with tortilla chips or frito scoops.
- 5 this is best served in some sort of a fondue pot, or microwave safe bowl, so you can reheat it if necessary.
