Queso Blanco Con Chipotle

Ingredients

  • Servings: 8
  • 1 1/2 lbs american cheese
  • 1/2 lb velveeta cheese
  • 12 ounces chopped green chilies (canned, do not drain them)
  • 1/4 cup chopped cilantro
  • 3 green onions, thinly sliced
  • 2 -4 canned chipotle chiles in adobo
  • 1 tablespoon adobo sauce
  • 1 cup mexican crema
  • 1/2 cup half-and-half

Recipe

  • 1 mince the chipotles and place in pot.
  • 2 place all the remaining ingredients in a pot over medium heat, stirring to make sure it doesn't burn.
  • 3 cook it until it is melted and ingredients are well blended.
  • 4 serve with tortilla chips or frito scoops.
  • 5 this is best served in some sort of a fondue pot, or microwave safe bowl, so you can reheat it if necessary.
