Mushroom Melts

Ingredients
- 2 teaspoons butter
- 2 tablespoons finely chopped shallots
- 5 1/2 ounces mushrooms, chopped
- 1/2 teaspoon crushed garlic
- salt and pepper
- 2 teaspoons lemon juice
- 2 teaspoons flour
- 16 water cracker biscuits
- 4 sandwich pepper jack cheese slices
- paprika
Recipe
- 1 1. melt butter in a small pan, add shallots, mushrooms and garlic and saute'.
- 2 a little. add salt, pepper and lemon juice. stir in flour and cook 1 minute.
- 3 allow to cool.
- 4 2. place a teaspoonful on each water cracker biscuit. cut each cheese slice
- 5 into four squares. place a piece over the mushroom mixture on each
- 6 cracker.
- 7 3. place in hot 325 degree oven until cheese melts. sprinkle with paprika and serve.
