Ingredients
- 4 medium ripe tomatoes
- 3 ounces grated cheddar cheese
- 3 eggs, beaten
Recipe
- 1 combine tomatoes and cheese in a saucepan on low heat and stir gently until cheese is melted.
- 2 remove from heat and add well beaten eggs.
- 3 return to low heat and cook until it is thick.
- 4 serve with crackers or chips.
