Red Bean & Tomato Dip - Low Fat

Ingredients
- Servings: 4
- 400 g tomatoes, diced
- 200 g kidney beans
- 1/4 onion, diced
- 1 garlic clove, crushed
Recipe
- 1 soften the diced onion and minced garlic in some water or apple juice in a medium pot on medium heat.
- 2 add 400gm diced tomato and simmer.
- 3 drain 200gm can of red kidney beans and wash thoroughly, then add to the tomato mixture.
- 4 simmer on low heat for 15 minutes.
- 5 add salt to taste.
- 6 if you want to spice this dish up, add some fresh chili and chopped capsicum.
