Red Bean & Tomato Dip - Low Fat

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 400 g tomatoes, diced
  • 200 g kidney beans
  • 1/4 onion, diced
  • 1 garlic clove, crushed

Recipe

  • 1 soften the diced onion and minced garlic in some water or apple juice in a medium pot on medium heat.
  • 2 add 400gm diced tomato and simmer.
  • 3 drain 200gm can of red kidney beans and wash thoroughly, then add to the tomato mixture.
  • 4 simmer on low heat for 15 minutes.
  • 5 add salt to taste.
  • 6 if you want to spice this dish up, add some fresh chili and chopped capsicum.
