Marinated Mushrooms

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 2 lbs fresh mushrooms (medium, 50-60)
  • 2 cloves garlic
  • 1 cup red wine vinegar
  • 1 cup water
  • 1/2 cup olive oil
  • 1/2 cup vegetable oil
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 12 whole black peppercorns

Recipe

  • 1 clean mushrooms and set aside.
  • 2 crush garlic.
  • 3 for marinade, combine all ingredients in dutch oven.
  • 4 bring to a boil; reduce heat and simmer 5 minutes.
  • 5 add mushrooms; simmer,uncovered, 10 minutes.
  • 6 remove from heat.
  • 7 let stand until cooled slightly.
  • 8 transfer mushrooms and marinade to container; cover and refrigerate until ready to serve.
  • 9 to serve, drain marinade from mushrooms.
  • 10 transfer mushrooms to serving dish.
