Marinated Mushrooms

Ingredients
- Servings: 12
- 2 lbs fresh mushrooms (medium, 50-60)
- 2 cloves garlic
- 1 cup red wine vinegar
- 1 cup water
- 1/2 cup olive oil
- 1/2 cup vegetable oil
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon dried thyme leaves
- 12 whole black peppercorns
Recipe
- 1 clean mushrooms and set aside.
- 2 crush garlic.
- 3 for marinade, combine all ingredients in dutch oven.
- 4 bring to a boil; reduce heat and simmer 5 minutes.
- 5 add mushrooms; simmer,uncovered, 10 minutes.
- 6 remove from heat.
- 7 let stand until cooled slightly.
- 8 transfer mushrooms and marinade to container; cover and refrigerate until ready to serve.
- 9 to serve, drain marinade from mushrooms.
- 10 transfer mushrooms to serving dish.
