Rachael Ray's Thick Cut Onion Rings With Spicy Dipping Sauce

Ingredients

  • Servings: 4
  • vegetable oil
  • 2 large sweet vidalia onions
  • 2 (5 ounce) cans evaporated milk
  • 1 cup flour
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sweet paprika
  • coarse salt, to taste
  • 1 cup low-fat sour cream
  • 1/4 cup chili sauce
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin

Recipe

  • 1 heat 1" oil in a large frying pan over medium-high heat.
  • 2 slice onions across into 1" rings and separate, discarding the outer layer of skin.
  • 3 pour evaporated milk into a small bowl.
  • 4 mix flour with seasonings in a pie plate or shallow dish.
  • 5 dip individual rings in milk, then coat in flour.
  • 6 fry in a single layer in hot oil (about 360f) till golden brown.
  • 7 remove to brown paper bag or paper towel lined surface to drain.
  • 8 salt while hot, to taste.
  • 9 for dipping sauce, combine all ingredients in a bowl and stir.
  • 10 **15 minutes is approximately.
  • 11 frying time.
