Rachael Ray's Thick Cut Onion Rings With Spicy Dipping Sauce

Ingredients

- vegetable oil
- 2 large sweet vidalia onions
- 2 (5 ounce) cans evaporated milk
- 1 cup flour
- 1/2 teaspoon dry mustard
- 1/2 teaspoon cayenne pepper
- 1 teaspoon sweet paprika
- coarse salt, to taste
- 1 cup low-fat sour cream
- 1/4 cup chili sauce
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
Recipe
- 1 heat 1" oil in a large frying pan over medium-high heat.
- 2 slice onions across into 1" rings and separate, discarding the outer layer of skin.
- 3 pour evaporated milk into a small bowl.
- 4 mix flour with seasonings in a pie plate or shallow dish.
- 5 dip individual rings in milk, then coat in flour.
- 6 fry in a single layer in hot oil (about 360f) till golden brown.
- 7 remove to brown paper bag or paper towel lined surface to drain.
- 8 salt while hot, to taste.
- 9 for dipping sauce, combine all ingredients in a bowl and stir.
- 10 **15 minutes is approximately.
- 11 frying time.
