Peach Jam

Ingredients
- 2 quarts peaches, peeled,pitted and crushed
- 1/2 cup water
- 6 cups sugar
Recipe
- 1 combine peaches and water in a large saucepot.
- 2 cook gently 10 minutes.
- 3 add sugar, stirring until dissolved.
- 4 bring slowly to a boil.
- 5 cook rapidly to gelling point, about 15 minutes.
- 6 as mixture thickens, stir to prevent sticking.
- 7 remove from heat.
- 8 skim foam if necessary.
- 9 ladle hot jam into hot sterilized jars, leaving 1/4-inch headspace.
- 10 adjust two-piece caps.
- 11 process 15 minutes in a boiling-water canner.
- 12 remove from hot water bath.
- 13 cover with dry towel.
- 14 allow to set until caps seal and jars are cool.
