Peach Jam

Ingredients

  • 2 quarts peaches, peeled,pitted and crushed
  • 1/2 cup water
  • 6 cups sugar

Recipe

  • 1 combine peaches and water in a large saucepot.
  • 2 cook gently 10 minutes.
  • 3 add sugar, stirring until dissolved.
  • 4 bring slowly to a boil.
  • 5 cook rapidly to gelling point, about 15 minutes.
  • 6 as mixture thickens, stir to prevent sticking.
  • 7 remove from heat.
  • 8 skim foam if necessary.
  • 9 ladle hot jam into hot sterilized jars, leaving 1/4-inch headspace.
  • 10 adjust two-piece caps.
  • 11 process 15 minutes in a boiling-water canner.
  • 12 remove from hot water bath.
  • 13 cover with dry towel.
  • 14 allow to set until caps seal and jars are cool.
