Marinated Portabella Mushrooms "pizzas"

Ingredients

- 4 large portabella mushroom caps
- 1/4 cup olive oil
- 1/3 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 (8 ounce) container hummus
- 1 tomato, sliced
- 4 ounces feta cheese
Recipe
- 1 place mushrooms in a quart size zip lock bag with oil, vinegar and garlic.
- 2 marinate for 1 hour, tossing once or twice.
- 3 season with salt and pepper to taste.
- 4 broil mushrooms for about 4 minutes on each side, stem side down first, then flip.
- 5 carefully remove from broiler and top each mushroom with 2 tablespoons hummus, a slice of tomato & 1 tablespoon feta.
- 6 return to broiler and broil for 1 minute longer.
