Marinated Portabella Mushrooms "pizzas"

Ingredients

  • Servings: 4
  • 4 large portabella mushroom caps
  • 1/4 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 garlic cloves, minced
  • 1 (8 ounce) container hummus
  • 1 tomato, sliced
  • 4 ounces feta cheese

Recipe

  • 1 place mushrooms in a quart size zip lock bag with oil, vinegar and garlic.
  • 2 marinate for 1 hour, tossing once or twice.
  • 3 season with salt and pepper to taste.
  • 4 broil mushrooms for about 4 minutes on each side, stem side down first, then flip.
  • 5 carefully remove from broiler and top each mushroom with 2 tablespoons hummus, a slice of tomato & 1 tablespoon feta.
  • 6 return to broiler and broil for 1 minute longer.
